Don’t you have to be 65 to be considered?

First, you have to become a Mason and get to Master Mason. Then you apply to Shriners..

3rd degree initiation was awesome.
Can’t speak to it, but I highly recommend. They really don’t do it anymore?

3rd degree here. I love being a Knight! And I'm in my 40's, not 70's. Belong to an awesome Council in Dripping Springs Texas. Would highly recommend joining the Knights. But as others have said, you only get out of it what you put into it. It's pissing me off reading about these guys who spent 3 months in the Knights and claim that they didn't get anything out of it. No shite, Sherlock. Also, if you don't understand how the life insurance is part of the nights, you don't understand the origin of the Knights. A portion of the premiums goes to some incredible causes around the world!

True. What is the origin?

Won’t the CC kick you out if they find out you’re a Mason?

Irish Catholics immagrants in New England states worked long hours, dangerous jobs, and often died leaving family behind with no financial support. The only way to have any kind of insurance in the mid to late 1800s was to be a Mason. Well, that's pretty much verboten (yes I know Mason's don't keep Catholics from joining, just the Vatican has a problem with a society that was secretive, a debate for another day).
As a result, Fr. Michael J. McGivney decided to start a Catholic fraternity as a mutual benefit society which grew to the order it is today. Yeah, insurance is still a thing but not a prerequisite to be a member.

Yes. My chapter has a ritual gangbang with a Korean Immigrant every Thursday. Followed by a pizza and soda party.

If you have a desire to put love into action, then join. Must be a catholic in good standing AND at least 18 years old.
You will get more out of it than you put into it.
Our Council helped with the Special Olympics one time, and those kids had a great time. We received far more than they did. I always receive peace in my heart just reflecting on that day. It was awesome!
Will meet a lot of great guys that are not perfect. It is for the imperfect men that are trying to be a good person.
The best time to join is now.
Vivat Jesus!
You can save the world one person at a time. If you die before you finish, at least you tried.

I'm still looking for an answer to a question no one has answered yet.
Is advancing levels determined by how much insurance you sell?
If not, what determines whether or not someone advances to the next level? What effect does advancing levels have on participation?

No, insurance has nothing to do with it. You don’t have to purchase it to be a member or to reach the next degree. The only people who sell KofC insurance policies are Field Agents, and there aren’t tons of them running around.

This KofC council’s webpage breaks it down pretty good:

Thanks for posting that, but I still don't see how it answers the question. I just saw a bunch of mission statements without any explanation as to how each level is attained, nor what advantages there are to advancing.

Well yea. It would defeat the purpose of being a secret.
I’m a 3rd degree knight.
