From what I have seen, the Wii U version is quite inferior to the Switch version. I would only by Breath of the Wild on the Wii U, if I simply was not planning on buying a Switch in the foreseeable future.

Nintendo has a history of poor launch titles with it pretty much being one Mario or Zelda title and a bunch of shovelware alongside it.
The N64 sticks out to me because there was Mario, Waverace, and shite like Killer Instinct Gold and Cruizin USA which sold out just because of a lack of other choices.
Not that other launch title sets are much better but the massive sales of the AAA in house stuff and lackluster sales of third party stuff for Nintendo consoles tends to highlight it.

Lets examine some of the PS4 launch lineup:
Assassin's Creed Black Flag: Major AAA franchise
Need for Speed Rivals: Racing
Knack: 3D Platformer
Killzone Shadow Fall: FPS
Battlefield 4: FPS
CoD Ghosts: FPS
DCUO: MMORPG
Madden/FIFA: Sports
Maybe not every game was a runaway critical success, but you had a wide variety of different types of games to choose from. It wasn't just one major title and a bunch of garbage.

consoles that do this are destined to hurt though:
The Gamecube - Small Disc, small lineup, no internet service like the xbox or ps2, smaller library, ended up losing the console generation
PS3 - Extremely expensive, way less launch titles for price point, network service inferior to 360, "caught up" but was still super hindered by the bad launch
XBONE - DRM (yes, this was taken away, but the perception of this hurt them big time in my opinion)
Switch - Barebones OS, very few launch titles, no online store, ?

Two things killed the Gamecube more than anything else I think. 1) small proprietary disk format 2) weird controller.
No one wants to play Tony Hawk on a Gamecube pad, and the limited storage space of a Gamecube disk often meant games had to be shipped on two disks or corners had to be cut with respect to audio, FMV, or graphics quality.
I really don't think lack of online play hurt it that much considering online play was never that big on the PS2. You also had games like Phantasy Star Online which was a reason for people to buy the console.

Exactly. Even if they had some older 3rd party titles just to have something to play, it might be forgivable. I Am Setsuna, just googled, and you can download it free for PC. I Am Goo is almost 10 years old. Their next big name release is in April, Mario Kart, and it's just a port.
There are people who are going to buy this regardless, but if I were on the fence, I'm leaning towards waiting a year so I can avoid the launch BS and Nintendo can quit pretending they can't make the Switch fast enough.

The software is on the lighter side. But Fast RMX is suppose to be a good title its the sequel to Fast Racing Neo for the Wii U. And Shovel Knight is getting a time exclusive expansion
