whats your batting average on getting a burger cooked correctly?

mine's below the mendoza line for some reason...

last night we went to one of hammond's most talked about spots. as usual the place was extremely inviting, the staff couldnt be more accomodating, and the beer was superb. i would eat there at least once a week, except...

the burger was cooked past well done, careening towards incinerated (was ordered med-rare). its a shame because they use excellent ingredients and it should be a fine burger. as it was, it was inedible.

i run in to the same issue at hammond's other well-known burger place. i've never been able to get a burger there cooked anything less than burnt, even after repeatedly asking for it not to be overcooked

i get the food safety concern, but this is basic technique, especially for places that hang their hat on their burgers.

what's your experience?

I don't mind a burger cooked medium, but I'm not ordering one that way at a restaurant. I just don't trust them to freshly grind meat on a daily basis to keep from getting sick. At home is another story though. I'm a medium well burger orderer at restaurants.

i agree with you...ive never ordered med-rare and actually expected to get it. i'm hoping it will come out medium

but why ask me how i want it cooked if the kitchen will only deliver well done?

agree with the op ... if it's a premium burger place, having it your way should not be an issue at all ... if you want it raw or rare, then that's your choice ...

If I'm ordering to the temp of medium rare, about 75% of the time it's done right.

Once I tried ordering a rare hamburger at one of guy fieri's chain restaurants and they wouldn't allow it

I usually shoot for medium, but it never fails it is medium well or slap done. If I get lucky it will be right or mid rare which is still ok.

If I grind my meat at home, I nail it every time because I'm not scared to leave a mid rare center. I blast the heat, crust it on the outside, and that's that. If I don't grind it though, I lack confidence and shoot for medium but always wind up erring on the side of medium+. I'm sure that doesn't help anything health wise but it's just what I do in my head.

May have been a shitty restaurant, but they erred on the side of caution when it came to feeding you, getting paid, and you shitting your pants for the next 24 hours.

I always order burgers medium rare knowing full well they're usually going to come medium well at best.

I think a lot of people have trouble with burger temps in relation to thickness. This includes me. I could not tell you how long a grilled burger should be on there to reach desired temperature, so I now cook one side, flip, and use my meat thermometer to monitor until I hit a few degrees under med rare target before pulling off others on grill that should be med rare. Then continue through higher temps by order.

In restaurants I think a lot burger cooking is taken for granted compared other less forgiving foods.

It's ground beef and it's just one of many layers of a burger

I thought you were talking about cooking one correctly, yourself.

It depends how much i care about it. Sometimes i want a burger, but i want to make it "fancy", so i break out the cast iron skillet and throw it on the grill. Throw some butter on the skillet, add some onions, then throw the patties in. Once i get it cooked to my liking, i remove the skillet and get some char from the grill itself.

Delicious, and incredibly juicy.

Personally, i prefer my burger medium. The balancing act is to not dry it out.

I find it's not that difficult to keep a burger moist

I do. Mainly because i don't pay attention as much with burgers and my flame is way too hot.
