I used to love watching his show on Saturday mornings. He was funny too baw, could tell a story, and he could frickin cook!
He was something like an ambassador for cajun culture and cuisine. I think he was one of the most recognizable figures for Louisiana cooking; along with Folse, Emeril, and Prudhomme. Where would you rank him with the all-time greatest Louisiana chefs?

Meh. I watched him as a kid on PBS, but his shtick and recipes haven't aged well, IMHO. I own none of his cookbooks, whereas I have several by Prudhomme, Folse, and Lagasse.

So how do you know they haven't aged well?

1. He was not Cajun. I am.
2. His accent was not Cajun. It was a bad fake.
3. His recipes were horrible.
4. Some of his stories were good. Most were not.
The GOAT TV chef is Alton Brown.
PS... I will give Justin one Kudo. That was about wine pairings with meals. He said 'drink the wine you like.' It's simple but people are supposed to drink white wine with fish and red wine with meat. I don't like white wine.

Every Justin Wilson recipe:
1 1/2 cups Sauterne wine
4 tablespoons Lea and Parrains.
Let me show you how I measure this salt.

Actually he was from Tangipahoa parish and lived in French Settlement most of his life. He was a comedian first then later started the cooking shows. His father was a politician I remember that.
And no, he was not a chef, just a south Louisiana cook like most of us.

The answer is No. Justin Wilson was a humorist and an average home cook. He never professed to be a "chef"
He was a great ambassador for Louisiana, bringing in untold millions of revenue dollars to the area...mostly form tourist. For this he deserves a lot of credit and respect.

For the life of me, I don't understand why so many people claim Emeril as a Louisiana chef. I know he lives here now, has restaurants here, and has been for 30 years or so. But the guy is a Yankee. I've even had people vehemently argue that Emeril was from Louisiana. He is not.

He might be from Massachusetts, but he cooks the hell out of New Orleans style cuisine. I'm claiming him for Louisiana baw, in other words I would allow it

Friend of mine was classmates with Emeril at Johnson and Wales back in the day

Zach, you seem slightly constipated?

Man I loved Justin Wilson as a kid. My dad and I would watch him.

So did my dad and I. Makes my day when I see him on tv nowadays.

To be a chef you have to be a cook that is a manager of a working kitchen. Basically, a chef is a cook that manages other cooks. So Justin Wilson isn't a chef. Neither is Julia Child .
But anyone who dislikes Justin Wilson can suck it.

What Otis said MD. I've seen JW get railed on here and slandered to the point of being a faux coonass and a :gasp: Mississippi resident.
I'm a fan. I gare on tee.

Backed up enough to push it north and end up with diarrhea of the mouth.

And don't forget the Angostura or Pechos (sp?) bitters. Loved watching him.
