Wish I could have made it guys. I hope everyone had a great time and ate some delicious jambalaya. Let's make this a semi-annual event.

I wish the auction had a little more participation. It thinned out too fast.

I'm sure it was a nice amount, but most were there just to eat. Disappointed that none of the WFDT Stars came to show their culinary mettle.

I thought his was the best, too.

Spilled Milk's friend was very good, but too salty for my taste (I'm on a low salt diet, so I'm probably more sensitive than most to that).

And the guy next to him, nearer the building was probably my second choice, but I ate it last and was full at that point.

heypaul's was very good and very smokey, but lost points for being mushy. Some good ones out there, but honestly, a lot of the others were disappointing.

jeepfreak had a Cajun and a Creole (shrimp) version and both were good.

Observations:

Too many people used chicken breast. Breast meat gets too dry, use thigh meat only!

Whatever poultry you use, don't cook it to stringy shreds. Texture is important!

Add some green onions and parsley at the end - you won't believe the difference it makes.

Doesn't surprise me. A lot of people think they can cook because there family and friends tell them it's good. When you cook for the public and they have to pay/ (or in this case be judged) for a plate it's a different story. Most people can't cook as good as they claim. Sounded like a fun event though.

This is true. There were 3 or 4 pots of jambalaya that I would have thrown out before serving. When I talked to the folks , they would say it's a family recipe and they've always made it that way. No desire to try to improve it at all.

The event was fun, but I thought it would be much more of a food board group. Friendly people all around, but it was more of a bar group/event.

Well, I'd love to have an event with a bunch of F&D people, but only jeepfreak and heypaul identified themselves to me. I had a tag on my hat with "Stadium Rat" displayed. Spilled Milk's friend recognized the name from SM talking about the calculator.
