If you can get some RO water from one of the filtered machines, I would go that route. If not, use BR tap water and treat with gypsum and calcium chloride and a touch of acid (lactic or a couple ounces of acid malt) to lower the pH. I'd still make sure to use a little gypsum and calcium chloride, which will do wonders for hoppy beers.

This bad boy came in yesterday. I can't wait to use it.






Also finally got to try my last batch. It was a New England IPA with Mosaic, Citra, and Cascade hops and clocked in at 6.16 ABV. It came out so-so with a little more sediment than I would have liked. This new fermenter should help out with that. For those of you with a conical fermenter, do you still do a primary and secondary fermentation or just one long one?

Here is my take on the brew bucket which I have used for 8 batches now. Buy the domed lid if you really want to get 7.5 gallons in there. With a flat lid, there is no head space with 7.5 gallons. Along with the domed top you will need the 3" TC (blow off cap) and a 3" tri-clamp too....they may come with the purchase of the domed lid but verify this. Second, the valve tube inside the bucket that rotates is very narrow. Out of my 8 brews it has clogged while transferring to a keg probably 6 times. Brewing a Neipa with all the dry hops almost guarantees clogging. I have a brew fermenting right now that as an experiment I used a big grain bag to contain the dry hops. Last, the lid clamps are very flimsy. I had a blow off tube clog and the pressure build up deformed 2 of the clamps such that they are not usable now. I now use some large paper clamps to hold it shut.

i found that if you turn it to face down while you re fermenting will help this.

really? my seem very strong.

Wow. I guess maybe going with a larger blow off tube may help from clogging and overpressuring. The one that comes with it is only 3/8" so maybe 1/2" or so may work better. I do 5 gallon batches and usually nothing over 8% ABV.

I recognize that recipe.

up the hops on it later in the boil.

We have always frozen whole pineapples and mangos and thrown them in a sink full of star san solution day of dry hopping and cubed them up and put in a paint strainer bag with the hops to be able to rack after everything is done.

Summer of Saison here at Bottomland brewery is in full swing. Second one of the season is in the books.

8 lbs Pils
1/4 lb Acidulated
1/4 lb Melanoidin
2 oz Nelson Sauvin at Whirlpool
1 oz Hallertau Blanc at Whirlpool
1 oz Hallertau Blanc at Biotrans dry hop
1 oz Nelson Sauvin at Biotrans dry hop
3724/3711 combo. Fermenting in the garage at ambient. 70-85.

I have a quick sour with mango and toasted coconut in the keg right now. Has good flavor, but am having trouble getting this one carbonated. Wondering if the oils in the coconut flakes have anything with subduing carbonation. I know it could affect head retention, but don't know about carbonation. Also doesn't help that i severely undershot my carbing pressure Looked at the wrong style, and my beer fridge was warmer than the 40 degrees i calculated for. It sat a low carbing psi for a week before i got back from vacation and upped it about 10 psi. Been sitting at the current PSI for about 2 or 3 days now.

I bought a variety of hops for the Crosscut Saison season.
- Hallertau Blanc
- Mandarina Bavaria
- Aurora

along with some Azacca for a smash

Thanks. You mean just add additional hops to the recipe?

Okay. How strong of a mango/pineapple flavor does that give you? I want it to be pretty noticeable, but i also don't want it to be over the top.

I can do it this week. Highs this week are mid 80's and little sun. The garage stays around boiling during the summer and cold as shite in the winter.

Bug, how long are you keeping your sours on fruit, i know you said you kept some on for a few months. Im assuming that was to get some brett characteristics.

Im really not looking for that so im think 2 weeks is plenty.

Well, after much debate and consternation I went through my old brewing equipment the other night and decided to get back in the game. It's been 5 or 6 years since my last batch. I stopped because I was doing it solo and was running out of room in my fridge with all my batches. Have a friend interested in getting into it so we can split the cost/time/etc., while also joining heads on recipes. Gonna do a handful of extract kits to re-familiarize myself with the process before giving all grain a go.

First batch will be a Sip of Sunshine IPA clone.

Do any of y'all use Bru'n water? I'm finally trying to tackle water chemistry, but I'm pretty dumb with this stuff. Should I be looking at the "actual final water adjustment" line on the sheet as my targets for the salts?

I use it. Yes, you want to match the "actual final water adjustments" line with salts as close as you can to the "target finished water adjustments" line. And of course input your water report numbers into the "water report input" tab so it can adjust off of those numbers if your not using RO and DI.
