The Best Thing You Ever Ate...Pork Edition

I'm getting together with some friends this weekend for a little cook-off. The twist is, every dish has to include pork in some way. I'm curious what some of your favorite pork dishes are. Appetizer, main dishes and desserts.

I'm considering Korean sticky ribs or a Cuban sandwich with pork belly as my main dish. Would love some suggestions for any course though.

The best pork is the simplest IMO. Let the smoke do the talkin'

pork spaghetti
baby backs
pulled pork sandwich topped with coleslaw

3 of my favorites right there

eta: there are a ton of bacon desserts out there, but I've never tried any.

Chashu (Char siu) pork. Basically, pork belly marinated and braised in soy sauce, sake, green onion, ginger, garlic.

get a pork butt, slice it thin, marinate, and make a vietnamese dish.

there are lot of variations you can do with rolls & rice paper. Spring rolls, etc.

Pepper crusted pork tenderloin with a sweet heat sauce.

I also grilled some pork sirloins this weekend that were top 5 beat things I've ever grilled.

Two best pork dishes I've ever had were on the same day in this tiny arse village in Tuscany.

Lardo di Colonnata

Pappardelle with Wild Boar Ragu



which you could replicate no problem. I also had it over polenta in Florence, but liked the pappardelle version much better.

Participated in a similar cook-off in Lafayette a few years ago and did a Cuban style shredded pork roast Chimichanga (fried) with a cream, chili & lime sauce...it was the hit of the party.

I was suppose to do appetizers but the host picked up large flour tortillas. I didn't get to cut them and few ate much of the other dishes.

ETA: Here's a great recipe for Cuban Pork Roast. I modified the "Mojo sauce" by adding chili powder and heavy cream...and a little tequila!

Best pork dish I have ever had was 3 weeks ago at Boucherie. A special that night was a pork porterhouse, brined and grilled. Just amazing. I've never seen that cut offered any other place.
