TJ Ribs - Acadian - Closed By the Health Board
It's been in need of new management for a very long time now.
I like their LSU memorabilia in there. I imagine they are making repairs to the roof and scrubbing the place top to bottom now.
Any idea when they can reopen?

Well, it didn't open until the mid-90s, so I'm not sure if this is a clever joke or an ill-informed opinion. Regardless, I worked there from '97-'00, and we still had an hour+ wait on weeknights when I left. It wasn't really until all of the Las Palmas', Casa Marias, etc. started opening up when Ninfas' business took a hit.
I meant the chains within the Houston area.

I worked at Cheesecake Bistro when we had an 18 wheeler trailer for a cooler because the walk in was out, and we had the line coolers with food with bags of ice on them.
Food on the line was at like 55-60* and it needs to be under 41*.
It was a shite show. A very clean kitchen (was professionally cleaned each night), but bad practices on keeping equipment maintained.
On the other side of the coin, J. Alexander's is probably the best kept kitchen in the city. You could white glove test most of the kitchen with no issues.

To be fair that's like comparing apples and oranges. TJ micromanaged the shite out of the br ninfas franchise. Houston had over 20 something of them in the late 90s.

The City pork on Jefferson is pretty squeaky clean(and new obviously) .

I am the owner of TJ RIbs Acadian. We were shut down by the health department because we are installing a new hot water heater. Our old one failed, and the new one is currently being installed during hours of operation.
I appreciate the comments and concerns everyone has made about the TJ Ribs concept. We do take our business very serious.
If anyone has any issue with Ribs or Ninfas, please feel free to email me at burke@ribandchophouse.com.
We have the Coaches Show tonight, and plan on being open by 530. The hot water heater was shipped from New Orleans this morning, and the plumbers are waiting on its arrival to install.
Thank you,
Burke Moran

How and why did the health department get involved?
I'm not being a smartass, I'm seriously curious (and I get if you have other things to deal with than respond to this).

8 Critical problems within this short a period of time leads me to believe that TJ Ribs had a massive food borne poisoning epidemic that hits its customers. Someone check the legal records to see how many lawsuits have been filed against them for listeria or other contaminated food injuries in the last year.
Dramatic little thing aren't ya?
8 Critical problems ? .
No. Those things listed are not "critical".
A flooded kitchen because a pipe is busted is "critical".
An employee eating in the kitchen is not. Just a dumbass for doing it in front of the inspector.
Many of those things on that list are common in even the cleanest of kitchens.

Which is funny because I have seen that kitchen at its worst. When I dined in after it became City Pork, I was shocked they changed to kitchen to be open and in view.
That said, as messy as it got during our rush, the kitchen was never "dirty". Items were not un-sanitized or anything. We just had the kind of lunch rushes that were like a tornado came through the building.

Our hot water heater had a crack in the holding tank this weekend. Our staff followed the three compartment sink rule on washing and sanitizing dishes. The health department received phone calls telling them out hot water heater was broken. Apparently from concerned employees and guest.
The management team was on it to get a new hot water heater today. It has arrived and is being installed.
