I have older employees that insist you're supposed to put two spaces after a period to start a new sentence.

Two spaces was taught in typing classes, but it probably doesn't matter any more.

currently it is mandatory to use one space while writing my thesis. Therefore, I'll take that as correct.

Use one space.

Two spaces was a thing necessary on typewriters.

Two spaces I believe is how a lot of schools taught it, but it seems to be an antiquated style nowadays that some people still do just because it's how they were taught.

MLA standards change every year as do all of the "standards". So, space your sentences the way you prefer.

Except for pretentious and anal pricks, no one will notice or care if you use one or two spaces between sentences.

I'm in my 20s and was always taught two spaces. It isn't just an old person thing.

Neither. It's one space to end a sentence. Zero spaces to begin one.

I grew up using two, but have heard more often than not that one is the official way. Most places on the Internet make everything one space anyway, so whatever.
