Gluten free gravy - help needed

I have a cousin coming in town who can't have gluten. I was going to fry done duck breast and make a gravy. What kind of gluten free flour makes the best gravy? Any other gluten free cooking tips are welcome

Try using potato starch instead of flour. It won't be as shiny/gluey as cornstarch, but will still give nice body/texture.

Cornstarch is gluten free I think.

You can thank companies messing with a good thing. I'm sure there's people who think they have it that don't, but it is a real thing.
For me, it makes me break out in this bubbly, itchy rash. It's mainly on my ring finger on my left hand, but it was starting to show up on my lower back before I quit eating the stuff.
I've lost 25 lbs since the beginning of this year when I stop eating wheat.

Make a grease gravy. I never had flour in gravy growing up, and honestly it tastes much better without it.

Magic shite. You actually pour off the grease, but it involves cooking the pot down until that's all that's left not stuck to the pan. I think some people call it an onion gravy as well. It's how the Cajuns eat rice and gravy where my parents are from.

just use the mccormick gravy in the little red packet. it tastes the same as the normal gravy.

Flour is good for a roux. That's really all I used it for. I switched over to cornstarch for frying. It comes out much crispier. Flour can clump up on you.
