Huffington Post has a list of recipes you should know how to cook by the time you're 30
LINK
It included tofu stir fry and risotto, a couple of things I will never cook.
What dishes would be on your list for a Louisiana 30 year-old?
Gumbo
Jambalaya
eggs
grilled cheese

My son is 9 and has both of them down pat. His babysitter (my neice) called me at work to tell me that he wanted to make tuna fish yesterday. I told her to let him, he does it when im home.
By the time you 30 you should be able to cook everything that your parents cooked.

You should know by the time that you're 30 that tofu is completely worthless and doesn't belong in any dish

Eating tofu is like eating a sponge.

Same. Not a fan of most of the normal stuff: étouffée, red beans, jambalaya, etc.
I don't hate gumbo, but I work in a gumbo joint so no point in making it at home.

Honestly there are very few restaurant gumbos I've had that match up to the good homemade stuff IMO
I would say my favorite was at Atchafalaya restaurant in New Orleans. Seafood gumbo at LA Lagniappe in BR is good as well.
Almost everywhere else I've had gumbo it was mediocre.
