Good deal on Deer Processing...

I shot a deer a couple weeks ago and really didn't feel like processing it myself because I'm living with a friend while our new house gets built so I asked around my hunting club and found a guy near Covington area (address is in Amite.) Name of the joint is Wallace Bahm's meat processing. Does it in a shop on the side of his house. Only processing, not a meat market. Had the whole thing except backstrap made into sausage - 1/2 cajun, 1/2 smoked. Total price was $110 bones. I had quartered the deer, but for an extra 10 he'll clean it for you too. Product was very good, but not phenomenal.
I've paid as much as $300 from Bergeron's in Lobdell. That's plain stupid expensive IMO.
Anyone know of other good places near BR that are reasonable? I also hunt public around here so I need another place to try.

You supply your own pork? I own The Sausage Shed...and with pork prices, seasoning, casing, and vacuum bags he had to lose money. Depending on what you get done, $300 is a pretty standard amount of most orders. If you don't process your own game, it can be expensive, but you get what you pay for.

how many lbs of meat did you bring? how many lbs did you get back from him? $10 extra to clean a deer is awesome.

Say someone brings you a 120 lb doe quarted out without the backstrap. Show us what cost $300 to make sausage out of it.
Personnaly I don't get deer sausage made. I rather eat a deer roast and pork sausage.

Doesn't take long to get to 300.00. Having sausage made at the place I take my deer to runs me $3.40 a pound.

I bring mine to Bergerons every year. Hands down the best sausage out there. Never cost me 300 bucks. I've posted before how much I paid I may try to find it.

I get very little sausage made and my buddy from highschool owns a shop. It costs me about $65 to get steaks and roasts cut out. Maybe 10lbs of sausage.

Guys, why not just buy a good grinder and do it yourself?
1/2hp at Bass pro on sale goes about $300. Best investment I made. I had a cheap one for years that would take all day. The one I have now, finish a job in no time. That sucker eats the meat.

Someone brings a 120lb doe in to be processed...assuming a 35lb yield. 35lbs of deer + 35 lbs of pork times $2.99lb(that's assuming they just want regular fresh sausage) puts the order at approximately $210. Most of our customers order some specialty sausage which cost more..things like andouille, spinach and feta sausage, jalapeno and cheese sausage, jerky, tamales, etc....which normally puts them in the $300 range.

He charged me for 60 lbs of sausage at $1.85/lb. This was a 60/40 mix, so he used approx. 25 lbs of pork. The fresh sausage was double wrapped in freezer paper and the smoked was loose in 5 boxes like you'd get from any grocery store. I think he did the back straps for free as I just had him cut them into three pieces each and wrap em up. He makes other types of sausage and salami, most everything was $1.85/ lb though, even the "bacon burger" whatever that is....sounds badass, I'll try some next time.
I think he can charge that d/t low overhead. You'll catch my drift if you ever go there. It's a family business too which I like.
