I've seen a wide array of rock shows in person but the best live performances by far have been:
Metallica (4x )
Godsmack
Tom Petty
What say you?

Tool (5x)
Meshuggah (Houston 2012)
The Sword (3x)
Eyehategod (multiple times at Siberia)
Down (lots of places)
Clash of the Titans Tour (Slayer, Megadeth, Anthrax)
Earliest live show I remember is sneaking into Zeppelins in Fat City to see Crowbar.
Actual first concert I went to? My parents took my sister and I to the Styx Mr. Roboto tour at the MS Coast Coliseum when the babysitter cancelled last minute. I was like 5 or 6.

Metallica (3x)
Tool (2001 and Lollapalooza but 2001 better)
Queensryche (2x but the best was 1991 - Operation Mindcrime and Empire played in entirety back to back)
ETA:
Hit submit too soon.
Concrete Blonde (4x but best was with Mexican Moon in 1993 before Johnette's voice started dropping off)
Cat Power (2x)
Ray Charles (at a benefit in 1998)
Not "rock" - Cat Power, Sarah McLachlan and Tori Amos are all tremendous live performers.

U2 at the Pmac fricking rocked. No fancy light shows or shite like that. Still remains my favorite concert to this day. It was like you could just feel the power in the music. They filled the space.
Pink Floyd at the Dome was damn cool, too. 2nd best for me.
Rolling Stones I guess would be 3rd, but they rushed through their songs like speed demons. Didn't like that, but the show was good.
