pretty good idea IMO.
since I've lived in Houston after college, I've always wondered why someone hasn't opened one in BR.

I'm interested in trying this out. Everyone I knew from Houston at LSU always complained about the lack of a decent kolache around Baton Rouge.

i had never even heard of a Kolache until moving to Texas. The ones i've tried at some of the local places out here in West Texas were very underwhelming; a pretty mediocre pig-in-a-blanket. But Mrs. Vedder tells me the ones she had in Houston were much better.
I would image something like this would do well around LSU.

My buddies almost opened up a Kolache Factory here a few years ago. Never materialized for a number of reasons though.

damn I don't want to offend the great culinary minds that make up this great state but the breakfast scene is totally lacking compared to Texas. Kolaches from the Germans, breakfast burritos from the Mexicans.

Biscuits > Kolaches. simple.
i moved here from Louisiana to Houston.
The first time I saw a Kolache, my reaction:
KK: "What the hell. I don't want a roll for breakfast"
CoWorker: "It's not a roll, it's a Kolache"
KK: "Yeh whatever, you people need to learn to appreciate biscuits not tacos and sweet rolls for breakfast"
Coworker: "......get one and take a bite"
KK: "Is this cheese, sausage, and jalepeno? I'm sold"

I can think of three locations with a few miles of my old office. The big guys had them brought in every morning.

The only ones I've seen in BR are at Mary Lee Donuts (strangely, all the different locations seem to have kolaches even though I think they're individually owned), and maybe at Ambrosia Bakery. Limited varieties though.
The one I had at Mary Lee was kind of like a croissant pastry wrapped around link smoked sausage and cheese.

There are a lot of shitty kolaches in Houston. Kolache Factory, Shipley's, Morning's sucks now...all shite.

What's your favorite kind? I don't know too much about to kolache craze. I've had sausage, cheese,and jalapeno but that's about it. My Houstonian friends always talk about different combinations.

Fleur De Lis donuts on Old Jefferson just past Highland makes a good one ... they do cheese, jalapeno, BOUDIN, and my favorite, ... smoked chicken.

As usual, spot on. Sorry Kolache Factory, a skinny hot dog dipped in nacho cheese and stuck inside a yeast roll 5x the size of the link is really not all that good. eta: I like that place on West Gray and Montrose too.
