I did a home made version of Monjuni's shrimp pasta salad. Came out great but Lucy won't eat it because 'it has things in it.'
So, I stir fried some catfish and pasta for her to have when she gets up at midnight. That's also a new dish. I'm feeling frisky.
Her third choice is leftover grilled chicken and rice and gravy.

As I typed that realized exactly what I am going to make. Its been a few months since I mad a warm rice salad. I normally make some rice flavored with cumin, coriander, and cayenne and then prepare a salad of lettuce, tomatoes, cucumber, and red peppers. Dress with lemon juice and then mix the rice and salad together. I will either keep the things whole or cut them into strips and toss with the salad.

We went to Taco Boudreauxs because I had a restaurant.com gift certificate. I paid $25 for 50 worth of food (including gratuity) and will never go back.
