This is the only thing that works for me. I still tear up a little, but I think my onion-resistance is pretty low. My girlfriend can cut a 100 onions and never shed a tear, but I take one slice and the waterworks come on. Even worse when that stuff gets caught between my glasses and my eyes. Burns like a fire.

Refrigerating onions helps a lot. I never understood people who don't refrigerate them.

1. I've got a sharp knife and I never tear up when cutting onions.

2. I seem to remember that refrigerating onions is bad. It causes a molecular change that reduces any nutritional value. But I guess if all you want is taste it doesn't matter.

3. I know that refrigerating bananas is bad. It changes complex sugars to simple sugars.

But I like cold bananas. I usually put them in the fridge for about a couple hours before consuming.

having a candle nearby really helps and a sharp kinfe is key, but the best wat i have found is to take the outer most layer of the onion and rub it beneath your lower eyelids.

I always cut my onions on my stove with the vent turned on. Seems to take care of that for me.

What I don't understand about those things is someone actually went through the trouble of cutting the ends of the onion off with a knife and pealed it so that they could put it in a gismo to dice the onions, so we've dirtied a knife, a cutting board, and the gismo itself. Why not just cut the onion with the knife and be done with it? Additionally, I would think most people are also cutting celery, bell peppers, and/or carrots, and garlic at the same time they're cutting onions when cooking.

And what if I need to julienne the onion?

I have no clue, onions don't bother me much but I've seen several people do the match thing.

Then don't use the vidalia chopper?

I don't have one but I could see it being useful if you needed to dice 12 onions or something crazy

I suppose, but what about all the other aeromatics when cooking? Still have to cut that up, and still have to cut the ends, peal it, and cut it in half before you can use the thing. Just seems like another one of those nifty gadgets that end up pushed in the back of the cabinet. To each there own. It just seems like a lot of trouble to cut up onions, and maybe they have different dyes, but it also appears to be a pretty large dice.
