My granmaw never refrigerated mayo. Now, I wouldn't eat it, but it never killed anyone at her house.

Unless it is contaminated with some type of protein it is fine. I refigerate my mayo, but it won't kill you or even make you sick if it isn't refigerated.

Mayo a has high acid content. The lemon juice and vinegar actually slow the spread of bacteria. Mayo is much safer than most people think. My grandma also left it un-refrigerated. It's fine.
