Making the good/fluffy scrambled eggs...

that you find in tasty hotel breakfast buffets/restaurants. I can't even come close. I even looked at some videos online and taken their advice (mix eggs with a bit of water, not milk + include melted butter). I eat quite a few eggs when I'm on Atkins, so any advice would be big.

I use milk, and just a little melted butter in the skillet, then take a rubber spatula and just fold it over itself as the eggs firm up while breaking it up into pieces

You have to use room temperature eggs. This is the French Food at Home lady's recipe for omelettes.
Then she adds the toppings and folds. I assume this is very similar for fluffy scrambled eggs as well.

they do it on a large flat grill set to 325 degrees and use cartons of scrambled egg mix.

don't bother with any of the crap above.... put the eggs in a blender before you pour them into your pan. done.

Add just a tablespoon or so of water, whisk very well. No need messing up a blender although that works. Just another thing to clean.
Non stick skillet with a tablespoon of butter on low heat. Add eggs and slow cook them by folding. Remove from heat and serve before they dry out. They should still have just a bit of moisture in them. I believe the key is the low heat and longer cooking time.
And I scramble two dozen a week for 35 years.

i keep my temp at a low and slowly, but constantly stir my mixed eggs. Fluffy and good

I put a tbsp of butter on the skillet and let it melt until it pops.
I mix eggs and milk in a bowl, and let it cook on the skillet until it's easy to flip them over. I chop up the eggs, add salt and pepper, and flip them around for a while.
They're absolutely delicious and fluffy. I always impress people in the morning with my eggs.

Get small skillet
Add little bit of butter..melt to cover bottom of pan
get eggs break into bowl
add little bit of sour cream
whip eggs with fork until all blended
put in hot skillet
let sit for minute, then start folding over eggs until the doneness you prefer
enjoy

I do eggs and milk whisked together with salt and pepper.
Cook on LOW in tbs butter.. folding.. but not until they're super dry.. add in butter, parsley, green onions.. maybe some other herbs if you're into that.
