Other than the obvious items like milk, bread, eggs, etc..

What are some staples that you normally keep around the house? i.e. what are some things that you regularly keep around that might not be considered something that most people wouldn't keep around?

I always keep a couple of good cheeses in the fridge...can always add them to sauces, salads, or take them straight up

+1
Two things I always have in the pantry. Along the same lines, I also keep a jar of prepared pesto in case I'm in a rush and don't feel like making my own.

ETA: and roasted red peppers in oil

Zatarain's Yellow Rice mix
Fat-Free Refried Beans
Boneless, skinless chicken breasts
Ground turkey
Canned tomatoes
Yellow corn tortillas
Pam
Avacados

I love eating baked tortillas topped with beans, chicken, guacamole, etc. It's a staple in my house. And, the yellow rice is fat-free, so it's a great, easy side.

I usually keep a bunch of sauces/hot sauces/seasonings/fresh aromatics around.

Sriracha
Goya
Adobo
Hoisin
Cilantro-I use a lot of cilantro
Basil
Rosemary(I have a plant)
Chipotle peppers have come in handy for pork dishes
Different chile peppers(Poblano, Anaheim, Jalapenos)
Usually keep a bottle of tequila and some type of fruit jam(apricot/peach) to keep grilled chicken interesting
Mushrooms are usually always around

Fat-Free Refried Beans

I regret making my own refied beans once....now the cans sit in the pantry waiting for a Food Bank drive and I'm too lazy to make my own every time I want them.

Crushed Red Pepper for pizza.

I keep a lot of McCormick seasoning bags. For Tacos, Meatloaf, Spaghetti, etc. Sometimes when I think I've got nothing in the pantry,I find a pouch and I'm good.

Also I use the meatloaf pouch for burgers.

tofu

I've tried and failed on several occasions to make anything decent out of this...it's really just the consistency that bothers me

My kitchen is divided into three sections..
spices cabinet, pantry , fridge.

On any given day:

Spices Cabinet:
Cayenne, Salt, Oregano, Black Pepper, Celery Seeds, Olive Oil, La. Hot Sauce, Liquid Smoke, Garlic Powder, Onion Powder, Angustura Bitters,

Pantry:
Monjunis pasta sauce, cream of shrimp soup, Bush's vegetarian beans, dried pasta sea shells, dried white beans, dried pinto beans, LOTS of granola bars.

Fridge:
1 pint of whole milk, 6 eggs, 3 bottles of OJ, jerk marinade, catsup, mayo, regular mustard, brown mustard, large pitcher of cold water, large pitcher of lemonade (for the wife), fat free mayo, chow chow, 4 bottles of beer, terryaki sauce, six pack of caffeine free coke. 4 bottles of grape flavored vitamin water.
A lot of the fridge is stocked with leftovers.
The freezer is full of chicken stock and shrimp stock for later dishes.
