Frying fish in crawfish pot/basket.

I need to fry fish for 15 people next weekend, so was thinking of using my 60qt crawfish pot. Would love any tips for this, as well as how to keep temp.
I also need to fry some chicken tenders too, so wondering if it would be ok to do a batch in the fish fry grease? Or maybe I could do the chicken first and fish after that? Any ideas how much fish I be a fry at once?

It's going to be difficult to regulate the temperature with a crawfish burner.

I cook for that many with a two basket two gallon fryer setup.

That does sound like overkill for 15 people. There quite a few electric fryers that hold a little over a gallon of oil that would be perfect for your application and you don’t have to worry about it regulating the oil temperature.
You can pick one up from Walmart or Amazon for 45-60 bucks. I plug mine up on my back porch.
A simple propane pot and basket like posted above works also.

Instead of a 60qt pot, do you have a turkey frying pot? Not a perfect setup, but it can work in a pinch.

Use a round bottom jambalaya pot and burner. Somebody you know has one you can borrow.
Doing chicken and fish at the same cookout is gonna be damn hard to do with a single pot. Frying chicken is a damn mess and takes much longer than fish. If you want it all to be done around the same time youre gonna need 2 pots and a non-retarded helper.

assuming 1lb pp that’s only 15 pounds of filets. You could fry that in anything…a big Dutch oven would be sufficient. You’re going to need to fry in batches anyway to get a good crisp no matter what you use.

Use a big cast iron pot and peanut oil.
Also cut an onion in half and it will help keep ur grease clean and last longer.

I cook fish in that quantity semi regular in my same Dutch oven I use for jambalaya and gumbo.
Burner on low, about 1-1.5, gallons of oil, try and keep around 350.

I do this for a living. I usually figure 3 people to the pound depending on other items on the menu. Considering your frying chicken also & assuming you have something else filling like jam, I'd fry 6 to 8 #s. Not enough to fire up a big pot.

I’d just do a Dutch oven on a jambalaya burner. Or get the aluminum pans with the basket.

I’ve had this setup for years, except mine doesn’t have the rack next to it. It’s been good for me. Did about 100 chicken wings using it for Super Bowl one year. Also have done fish fries. The burner also works well for wok frying or searing steaks on a cast iron skillet.
I’ve done reverse sear with sous vide steaks on it. I just rotate the pan 1/3 of the way around every 45 seconds and then flip. Steaks come out perfect.

The double basket electric fryers are the ticket. set the temp and forget it. And you can pull the heating element and dishwash the rest of it
