I haven't really followed the Star Wars animated series, so I had to look up how Maul has legs now

It looks good, but are they trying to turn Maul into a sympathetic character?

Was it purely money why this was done as animated? Feel like this would have killed and appealed to a wider audience as live action.
I still find the fact he survived being cut in half and plummeting down the shaft to be offensive to the source material. Felt the same way about the sequel trilogy. It just completely cheapens the deaths/sacrifices of Qui-Gon and Anakin.

Maul's live action is limited to just a few scenes in The Phantom Menace and the ending of Solo.
Practically everything about him that we know comes from his animated appearances (Clone Wars and Rebels), so that is probably why.

It does, but it also doesn't mention that fact that Obi-Wan killed him in Rebels. Kind of an important tidbit about him that they just pretend didn't happen. and no he's not coming back from that death, as he accepted that death by Obi-Wan peacefully.

One thing I liked about his character in the Clone Wars was that Maul always told the truth. Maul was abandoned by Sidious after TFA, so he tries to train his own apprentices to take Palps out. In the last arc of the clone wars, he basically tries to turn Ahsoka to his side by telling her that Palpatine is the secret Sith lord, that he's trying to turn Anakin to the dark side, and that he's about to kill all the jedi.
Maul is a weird inconsistent character driven by petty revenge. He wants to kill Kenobi for taking his legs, he wants to kill Palpatine for abandoning him. He takes over Mandalore for a time (he backs a coup against Kenobi's girlfriend thinking Obi Wan would rush in to save her), founds Crimson Dawn, dude has some crazy plot armor and a weird career path before Obi Wan finally kills him in a duel not long before the events of Episode 4 during the last season of rebels.

I disagree. The parts of Lucasfilm which Filoni was directly involved in is at least all watchable, some of it really really good. Filoni might have some silly childish stuff, but he also really understands Star Wars and has a deep love and appreciation for its characters and themes. Granted, Filoni's roots are in The Clone Wars, and Ahsoka Tano is his baby.

I was a college kid when TPM was released and love Maul. However, I think Maul surviving TPM and Sidious surviving ROTJ are both dumb as shite.

He didn't have a character in Episode 1. He was just a cool looking goon with no lines.
