Leftover turkey: what do you like to do with it?

I bought a really big bird this year and I know I’m going to have a lot of leftover from it.

I have never made it before, but I have been wanting to utilize my outdoor cooker beyond low country boils and boiled peanuts and make jambalaya.

Any advice? I’m assuming I would have to add the turkey last before the rice.

Use the carcass to make a turkey stock and then use it to make a turkey and andouille gumbo.

I will be using the carcasses to make stock, love that I’ll have one fried and one smoked, that combination makes THE best stock. Then convert that to a venison sausage and wild turkey gumbo to take to the hunting camp.

My wife makes turkey noodle soup with the carcass and turkey salad with the leftover meat. It's what I enjoy most about the turkey.

No. Add the turkey after the rice is done and mix the turkey in well. If you put it in as the rice cooks, there's a good chance it could break up a lot since it's already cooked.

I do the same when making chicken/andouille/okra gumbo. I will cook the chicken from the outset and pull it after about 1 1/2 hours, let it cool and remove the meat from the bones. Then I pull the meat apart a bit into nice bite size pieces and set it aside until the gumbo is done, then I put it back into the pot just to heat up. That way the pieces stay nice and fairly uniform.


As for what I do with leftover turkey:

Turkey Salad------like chicken salad
Turkey Noodle Soup
Turkey/Andouille Gumbo
Turkey Sandwiches with a dollop of potato salad.

Of course the carcass is always used to make a stock. The only thing I throw away from a turkey are the bones.

Good to know! I will have one of each and was wondering which would make the better stock. Of course…combine.

Cut it up and freeze it for stock at Christmas, especially with crawfish and boudin dressing
My Dad takes gravy, cut up turkey, roasted veggies, sour cream, some mashed potatoes, blended all up with a shot of brandy, and drinks it from a Yeti glass.

Sandwiches. A couple of years ago I made a pot pie with fried turkey leftovers. It was very good.

Gumbo and jambalaya are good. Cassoulet is another good option.

Absolutely this ! Next to duck gumbo it is my favorite. It puts chicken gumbo to shame.

Dude, you live in South Carolina. Why are you not making Bog?

I've made Turkey Bog with my leftovers every year since I moved to South Carolina, and still make it every year now that I live in Idaho. Thankfully I can get Anson Mills Carolina Gold rice shipped here. Can't really find a good onion sausage locally, but I use andouille now instead.

I want enough for one sandwich for myself the day after. I want the rest on to go plates with whoever showed up to eat.
