Feeling lazy tonight and making spaghetti. Had a pound of grass fed beef in the fridge. It rendered a lot of fat while browning. I know we used to strain this off growing up because it was ‘bad’ for you. What’s the conventional wisdom these days?

Do you eat the fat on a steak or pork chop?

I strain it into a bowl with a bunch of paper towels to soak it up, and throw in the trash...

Put in some flour, make a roux, thickens the sauce…

How much is fat and how much is water? Cook all of the water out then use at least a couple tablespoons in the sauce. It’s an eyeball thing. Maybe all of it maybe just a bit. Key is to cook until the bubbles and steam stop.

I just keep empty jars, say pickle jars or whatever. I strain in those and once full, throw in trash.

If it’s a lot I soak it up with paper towels. No messy strainer. If is a small amount, let
It go and cook it in.

Not sure why you are getting downvoted. Been doing the same for years.

Fat in most ways is good for you. Fat combined with carbs is not. Best to drain excessive amounts. I also consider oil settling on top of a dish to be pedestrian:)

It's my understanding that the fat composition from grass fed beef is one of the main health benefits of using grass fed over regular.

Because fat is where the flavor resides..

For spaghetti? Definitely drain unless you prefer a greasy red sauce.

I leave in a tablespoon or so. Don't hurt nothing.

It depends on what I’m cooking. If it’s loose meat spaghetti, I spoon most of it out into a bowl (push meat to one side and tip skillet toward you) because I don’t want the sauce to get all greasy. I trash the excess grease. But if I need to cook down some vegetables, I’ll use that fat as my oil to do that. It wouldn’t make sense to remove the fat, then add something inferior like vegetable oil to cook down vegetables.

stop buying the cheap fatty stuff. 90-10 and up won't have much fat to drain.

not fit to eat as a burger but in a sauce or soup is fine with me.

all of it has water (some more than others) just cook it off.

Drain it. Forget anything about health, your spaghetti sauce will just be a greasy mess
