Looking for some good instant pot recipes b/c having less and less time lately. whatcha got?

Birria chuck roast. Use the meat and consume however you like. I'll actually be making that tomorrow.

I picked up one of these up at Aldi preseasoned just to try. Added 1 cup of beef broth and cooked it in the crockpot. It was very good. I’d buy again.

Take a brisket flat and season it as you would to smoke on the grill.
Wrap in cellophane and put it in the fridge overnight.
Chop a large onion into 1/2 thick slices.
In a cast iron skillet, sear all sides of the brisket.
Add the onion slices to the crock pot and place the brisket on top.
With a spatula, scrap up any spices from the skillet and stir them into a cup of beef broth.
Add the broth to the crockpot, put on Low, and cook overnight.

swamp potatoes
I tried this after seeing a version of it on IG. Surprisingly good. I will suggest seasoning to taste as opposed to following the instructions verbatim. But it was a nice change of pace since I'm more of a beef/chicken fan.
There are probably 40 different versions of this on the web if you want to see some variations.

Chicken Taco Bowls
Layer in crock pot
Corn (canned or frozen)
Black Beans (optional- I usually leave them out)
Canned tomatoes (Rotel or regular if you don't like spicy)
Spinach (optional- I like it for an extra veggie
Sliced onion
Chicken breasts (I start mine from frozen)
Taco Seasoning
1 can of Red Enchilada Sauce
Low for 6-7 hours, high for 4 hours
Remove chicken, shred and return to pot. Add 1 box of mexican rice and cook for another hour. There should be sufficient liquid in the pot so you don't need to add any. Serve with cheese, sour cream, guac, chips, etc.
I will make a roast and chicken breasts that are simply seasoned- salt, pepper, garlic, maybe dry ranch, lemon pepper. Slice an onion and add mushrooms. This is good by itself or on salads, in quesadillas, sandwiches, etc.

All of this guys recipes are good. My wife requested his spaghetti last night. Tasty and makes a bunch

What he calls Southern Stew looks interesting. I think I will try a variation of that tomorrow, but with a mix of sausage and pork chops. I'm going to call my version, Collard, Peas, and Pig stew.

This is about as simple as can be, but it turns out pretty good. Get a cheap and fatty cut of pork, like country style spareribs. Salt and pepper and brown them on all sides using the sauté function. Add in a can of enchilada sauce and pressure cook for 45 minutes. Comes out fork tender.

Nom Nom Paleo is the go to for carnitas, beef, and many other things.
And don't sleep on using the IP to make precursors like chicken stock which will blow your mind to put in other stuff. The Nom Nom Paleo Instapot specific recipes are here.
Particularly with the carnitas, ask people if they like them crispy. When you make them on demand, you can transfer the meat straight into a cast iron and give them exactly what they want, let them dress it, and they'll call you the best.
