I can't Believe that there has not been a Drizzt Do'Urden movie or tv show

The R.A. Salvatore character is one of the most popular fantasy characters and in one of the most popular D&D realms ever, more popular in the book world than Geralt (the games pushed this one and they forked it up in the series.)
Is it that it would be to complex to make due to the environments?
I have read or listened to all the books at least three time.

No, it's because fantasy movies based on book series flop more often than not.You basically have Lotr and Harry Potter (and I guess sorta Twilight).
The Chris Pine DND movie was excellent and didn't make squat, a Drizzt book movie would have no shot. RA's heyday was way too long ago.
The only reason Witcher got made was because of the games, as you said yourself.
But yeah, it would also cost a crap ton to make and do it justice due to the sets.
There is also zero chance Hollywood would do a story about a good dark elf facing racism in the outside story justice, it would go into ludicrous allegory/politics territory and be terrible.
The only possible chance would be if they did the prequel book trilogy when he escapes and leaves the underdark.

Well while the books and his character are based on his belief that the dark elves are racists xenophobes.....Hollywood would napalm the story to lean into this aspect in a woke orgy of back patting and liberal drool. It would be absolutely terrible. They couldnt resist.

Look what they did to The Witcher.
As much as I'd love to see it, I don't trust Hollywood to hold true to RA Salvatore's Drow Hero.
They'd gender swap him into a trans-furry, pierced septum, effeminate freak who kills the patriarchy.

Between this, Dragonlance, and a couple other titles, D&D was awesome back in the day.
I haven't read any other their stuff in years, though. I wonder if it's still any good.

The earlier books would be fun to watch, but Drizzt eventually becomes some powerful and plot armored that you'd have to change some of the plotlines drastically to make it work.
There's also the misinterpretation of dark elves and their classic depiction as a form of black face. That was obviously never the creator's intention, but still; the version of skin coloration in BG3 and current media would probably work though so that's not as big a deal.
I'd watch movies based on the Dark Elf trilogy (prequels with his origin) and the Icewind Dale trilogy, but I don't know how well the other books would adapt.
Also, there's 39 novels. That's a LOT of material to try and adapt. An HBO series or the like would be better, if in the hands of competent writers.

Sort of. The drow and their society are:
-Matriarchal (females are usually bigger and stronger than males)
-Highly stratified classes of nobility (within each class level, females are superior to males)
-Very chaotic
-Highly religious (worshippers of Lloth, their societies are chaotic in her vein)
-Racist (believe in their innate superiority over other races)
-Slavers (while they don't enslave other drow, fealty of males to the females of their house isn't too far off)
What they aren't, are xenophobes. Because of their elitism, other races simply aren't worthy of their fear.

WoTC has already been working on that for the last 5-10 years by stating they see orcs and dark elves being inherently evil as exacerbating or reinforcing racist tropes against blacks.

I was a huge fan of Drizzt
But he is more geared towards a Sorbo Hercules type of show.
Drizzt is a full-on Mary Sue, but for 2 times in the series.
1. The first book

He may have created a banger character, but Salvatore is a dogshit writer

There is a Forgotten Realms series in development. There are hints that big characters would at least make cameos.
Two issues...
1. Current FR is hundreds of years past the good Drizzt stories.
2. Current DnD has retconned most of the evil out of Drow, which negates Drizzt's back story.
I'd rather see a series for Erevis Cale.

If I'm not mistaken, they were supposed to meet Drizzt in that movie and he was going to be their guide to the Underdark rather than the Paladin. That would have been cool, but I think they thought the movie would do better and didn't want to have one of their biggest characters just make a cameo. Also...they still can't decide if Drow are Ebony or Amethyst.

You saw what they did to Wheel of Time...right? Witcher? They dont know how to stick to the story. Its impossible for them.
