My wife thinks it’s ok to eat shredded mozzarella that’s been out overnight. I don’t think it’s safe. Been fighting this for an hour, online says not safe but she’s a doctor so I need more evidence.

Is it advised? No, not with softer cheese like that. Are you going to die if its been left out overnight? No, probably not.

Seems like a very worthwhile use of an hour.

Shredded mozzarella does need to be refrigerated to slow bacterial growth.

Will enough of the particular harmful bacteria grow on your mozzarella overnight to make you sick? Probably not, but it could.

She thinks it ok, you don't think its safe. To me these are two completely different terms. "Ok" means it won't kill you but you might get the bubble guts while "safe" means free from danger of a food borne illness. It might be ok, but it might not be safe.

More than likely the risk of spoilage bacterial growth is significantly higher than the risk of pathogenic bacteria growth.

Prepackaged low-moisture shredded mozzarella is fairly bullet proof when it comes to pathogenic contamination. In all my years, the most common contaminats to this type of cheese are mold growth from Aspergillus and stinky spoilage bacteria like Lactobacillus.

Pick your fight this isn't it, if she wants to eat it, let her...... If you think it isn't safe, toss it. Its a $5 pack of cheese, not worth arguing over. Personally, I would eat it, but we also eat butter that's been in a container on the counter for a week.
