What does 86 mean?

Back in the mob days, when someone said “go 86 him” - it meant to drive a person 8 miles out into the desert and put him 6 feet into the ground

It means to kill something. We used it when I worked in restaurants to communicate we were out of a product. A "dead" menu item that needs to be communicated.

Working in a restaurant in college, it was for getting rid of something.

I have never heard this, ever.
When I worked in a restaurant in college, we would "86" items on the menu when we ran out. It was also used to get rid of something or to stop something that you are doing. I have never heard "86" as referring to murder or assassination.

It is a context needed phrase but when discussing a person it’s always been about them being gone, no more or simply dead

It means to get rid of something. It does not necessarily mean to kill something and the stories of its origin are all indeterminate. Restaurant lingo, mob lingo; nobody really knows.
Greyhound had an ad campaign in the 70s or 80s that used the word in a jingle, something about 86ing other options besides Greyhound. I don't think they were advocating killing people who worked for Trailways.

Webster dictionary says it means to get rid of…. What level is up to interpretation of the actions of the person. I’d think a hit man would mean kill. Someone political could literally remove from office. How? Election, impeachment, etc.

That's not the standard use in restaurants, in my experience.
The kitchen would 86 an item from the menu when they ran out of something so the servers didn't try to sell it to customers.
