Looks good.
I feel like there’s a better cheese than cheddar to match with boudin, though.

usual poboy fixings I guess, I opted out of the lettuce and tomatoes and got both cheese they offered along with pickles and jalapenos. The spread is spicy cajun mayo I believe

And yes, I had rice on a poboy, which was fantastic

I love that they build that spot for when we’re in a pinch running out of Evangeline Maid bread and won’t be heading to Acadiana any time soon; however, they sure jack the prices up on just about every item there.

I make boudin sandwiches all the time.
