Suggest some good Crock Pot Meals

Due to my family's busy schedule, we inevitably use a slow cooker at least once every other week. The old standby stew beef has always been a staple. We are looking to expand our horizons a bit. Has anyone got some good suggestions for a crock pot meal that mom/dad and kids alike will enjoy?

I like getting some boneless short ribs and season them with salt, pepper, garlic and ginger. Top them with a Korean BBQ sauce and let them cook on low for hours until tender. Pair them with basmati rice and green onion.

Perfection.

Easy Shredded Chicken
2 lbs chicken breast (about 4 breasts total)
1 16 oz salsa (I prefer Mateo's)
2 limes squeezed
2 Tbsp cilantro



I have also done the Mississippi Pot Roast suggested by the F&D Board and our family loves it. Those would probably be my two favorite simple crock pot recipes.

Roast. My wife recently started making these and they're delicious and easy.

Put the roast in the pot, add a ranch packet, a packet of Kinder's seasoning, carrots, onion and new potatoes along with some pepperoncini peppers and some juice from the peppers. Let it cook for 8 hours on low.

I like throwing a Boston Butt in there with some onions and garlic, season it up and cook it down. Perfect for pulled pork tacos, sandwiches, or even rice and gravy.

Throw a can of black beans in there, corn as well if you like.
Add this seasoning packet, or just add your own salt/pepper/cumin/paprika/garlic and onion powder

Here's one I posted in May. There area also many crock pot/slow cooker threads, but you'll probably find most using the google search option.

We had this over the weekend and it was so flavorful. The gravy was delicious. People are frequently asking for crock pot recipes, so I thought I'd share it. We had it with grits and brussel sprouts, salad and homemade bread. I didn't make it, but it was a recipe I found some years ago.

The Best Crock Pot Pork Tenderloin


Ingredients

Chicken Broth - 1 Cup
Soy Sauce - 1/4 Cup
Balsamic Vinegar - 1/4 Cup
Honey - 3 Tablespoon
Dijon Mustard - 1 Tablespoon
Olive Oil - 2 Tablespoon
Onion, Minced - 1 Cup
Garlic Cloves, Minced - 3
Dried Rosemary - 2 Teaspoons
Dried Oregano - 1 Teaspoons
Dried Thyme Leaves - 1 Teaspoons
Black Pepper - 1/2 Teaspoons
Pork Tenderloins - 2
Cornstarch - 1 Tablespoon
Cold Water - 3 Tablespoons

Instructions

1. In a large Crock Pot add all the ingredients except the pork and mix until evenly combined. Add the pork and turn over to coat on all sides.

2. Cook on low for 6-8 hours or until pork is tender.

3. Remove pork from Crock Pot and place on a serving dish and tent loosely with aluminum foil. Allow pork to rest for about 7 minutes.

4. Thicken the sauce while pork is resting; in a small bowl, mix cornstarch with the cold water until it's completely dissolved. Pour all the liquid from the Crock Pot into a small saucepan. Add the cornstarch mixture and bring to a boil. Boil for 1-2 minutes until mixture thickens. Slice Pork and pour the thickened sauce over it and serve


ETA: We took the meat out of the crock pot and put it on a cutting board. Had the gravy in the crock pot to stay warm and people used a ladle to get the gravy. We were feeding about 18 people. I think it was doubled.

I used to make something like this, but add a can of corn and fresh spinach to this. Add a package of Mexican Rice in the last 45-60 minutes to soak up any broth created in the cook.

I really like to simply season (salt, pepper, ranch powder, garlic, etc) a roast in on crock pot and chicken in another. Slice an onion and add a couple cans of mushrooms. You can eat it over rice, use for quesadillas, sandwiches, salads, etc.

This barbacoa recipe comes from Claudia (she’s my girlfriend, but doesn’t know it). This is really good. Great for football Sunday. Easy. And delicious.

1.5-2 lbs chicken
3/4’s - 1 pack chicken taco seasoning
10-14 oz salsa verde

Mix taco seasoning and salsa verde
Cover chicken with sauce
Low for 6-7, hours

Can make tacos, burritos, quesadillas, bowls, etc.

Good reheated on the stove as well

Pot Roast
Years ago someone here had the following recipe.
Sear a Chuck Roast, mix up a can of Tomato Soup, can of beef broth.. coat the roast heavily with black pepper and either garlic powder or stuff the roast with garlic cloves. Comes out perfect.

Crock pot white beans.

Soak a bag of great northern beans overnight. Next morning dump them in a crock pot and add:

1 can original rotel
1 yellow onion diced
1 tablespoon minced garlic
1 pack smoked pork neck bones
8 slices of bacon
Add water till they cover just the beans by 3”
Salt, pepper, Tony’s to taste.

Cook on high for 6-8 hours depending on how hot your crock pot gets.

Once done, I like to mash about a 1/4 of the beans against the side of the crockpot. Makes it a little creamier.

Serve over white rice.

Pork butt, seasoned with s&p and seared off
White onion, sliced
4 jalapeño, sliced
1 can rotel tomatoes
1 jar Herdez salsa verde
Maybe add paprika, cumin, chili powder, garlic powder
Drop in crock pot, let er rip.
Serve over rice with black beans or serve as tacos

She uses an instant pot which is not a crock pot.

That's one that was going around on social media....it's been coined "Mississippi Pot Roast" and, as you said, it's actually pretty damn delicious.

I've literally outlawed Pinterest recipes in my house because these social media recipes are so often just absolute trash. This one was recommended to me by family and is the exception to the rule.
