Travel gift for a valued employee

I have a long time, valued employee who has been planning a trip to Hawaii with his wife for a year now. I’m looking to get him something nice before he leaves next week.
Guy makes very good money, but lives a simple life. He’s around 60 years old, likes fishing and drinking Jack. He just started to get into traveling. They are going on a European cruise next year.
I don’t really have anything in mind, would be willing to spend in the $500 range. Anyone got any neat ideas?

Depending on where they are going, maybe something like a helicopter tour of the volcanoes on the Big Island or the Na Pali coast of Kauai?

They’re staying in Honolulu. I wasn’t thinking of an experience but they would really enjoy that. They did hot air balloons in AZ last year.

I know this will probably get a shite ton of down votes...
But I bought my wife a Yeti Backpack for her business travel a few months ago. It is the absolute most durable/well-made back-pack I have seen.
Yes, it is over engineered and way over-priced for what you need. But the type of the gift you are looking for kind of calls for a "You'd never spend this money for this thing on yourself, so I did it for you." By a matching set for your employee and his wife, he will appreciate you thinking of her too.

I was considering luggage and bags for he and his wife, thanks for the options guys.
I’ve traveled with him for work, and he has some old luggage/bags, probably from the early 90s. The only thing I fear is, he’s so simple and regimented,, he will continue to use the same old stuff even if I get him some new luggage

Yeah, chances are high of that! Luggage can be very personal too, and I wouldn’t want to pick anything out for a regular person let alone someone set in their ways. My suggestion for eBags was to give them unlimited options of sleep masks, butt pillows, anti theft purses, medicine containers, etc.

He makes $200k a year and likely has a net worth well north of a million by now. I was hoping for something more thoughtful
ETA : I only say that bc he can buy whatever he wants. But he’s “new” to travel, I’m trying to get him something he doesn’t know he needs yet

If he's new to travel, do you know if he has lounge access at airports? (Or can you ask him?)
Maybe you could buy him lounge passes for the airports on his itinerary?

If you go the travel bag route, I can’t recommend the Cotopaxi Allpa enough. As someone who travels for work 3 weeks a month, it’s a game changer.

For someone that makes $200k I'd just consider an experience most likely, especially something they would normally not do due to the cost. Everyone has things they hate paying for.
As said, helicopter tour, fishing trip, nice dinner, etc.
Setting up reservations with his wife and then giving a gift card to a nice dinner would be a great gift IMO.

Fishing trip while there sounds like a winner to me.
Like others said he will continue using his old luggage until duct tape no longer holds it together.
