Where’d they go? When I was a kid, they were in every meat case in the Greater Baton Rouge area.

Yeah they just aren't a thing anymore. My father in New Orleans gets that am certain farmers markets now since no one deals with them anymore.

Seven steaks are still around, it’s been my experience they’re sold at stores based on demographics and geography. Grocery stores such as Rouses , Cosco, and Whole Foods prefer to sell higher priced meat. Slaughter houses and small stores with a true butcher shop sell seven steaks all day long. When in the area, I buy Boudin and Cracklin‘s from a butcher shop on the north side of town. Seven steaks are always available in the glass display case along with ox tail and similar cut meets.

If you do find them at a big store, they are boneless...WTH?

Grocery store in lower vacherie usually has 7steak. Bone in. But that is not a cheap meat anymore.

I know Cox's Meat Market in Reserve, La still sells them. Got that big 7 bone in it.

My parents butcher a calf every six months. My mom always gets 7 steaks. Good for soups. I also have prepared in slow cooker or Korean bulgogi.

Same goes for round steak with the bone. Can't find that very often either. I always thought these were "cheap cuts". What are they being used for now?

my favorite cut to smother and yeah, they are tough to find.

I can remember 7 steaks cooked down in a dark brown gravy over rice being a staple in our house as a kid.
I ate so much of that when young that it just doesn't occur to me to try to find them to cook.

I've stumbled across a few seven bone roasts at Albertson's. I had never heard of them until a few months ago, but they make a good crock pot meal, so I pick them up when I see them.

quote:You can attribute a percentage of their disappearance to the increased popularity of flat iron steaks. The flat iron originates from the top of the the shoulder blade. The "7" bone is just a cross-section of the shoulder blade bone. The flat iron is the second most tender steak on the cow. Once your remove it from the chuck, you lose the marketablility of the 7 steak. I circled it below in red for a visual aid.
Where’d they go?

Damn flat iron phenomenon!

There used to be a place locally that would serve seven steak as a plate lunch once a week. It closed down but it was really good.

Can someone tell me what part of the cow 7 steaks come from?

Check the AG stores. I know I used to see them at Carter's in walker. Pretty sure Hi Nabor on coursey has them as well.

The 7-bone steak, also known as the center-cut pot roast, comes from the chuck section of a cow, near the shoulder neck area. The cut includes a cross section of the shoulder blade, and the bone is shaped like the number "7". The chuck also yields other economical cuts of beef, such as the flat iron steak.

You do not see seven steaks much anymore because there aren’t too many true butchers around. Most AG stores will still cut them. But you will hardly ever see them in box stores that get their meat precut and packaged, then sent to store.
