I just quit my job

I was offered a job by another company. Positionwise, it was a lateral move. Pay and compensation, the new job offers a 30% increase theoretically.
My current job has me on very high end projects. The pay is low, but my last yearly bonus was 35% of my salary. My boss "promises" the bonuses next time could be 100% or more, but no guarantees.
I get to do work for very influential people, though. Not that it makes me more money.
The current job offers health insurance to me 100% of the cost, none to my family unless I pay for it ($900 a month) it offers no company vehicle, no gas compensation and no 401k or retirement options. I also work on average about 60-65 hours a week.
My new job pays out the gate a base salary of what I made last year bonus included, gas card, company truck, 4% match on 401k and 75% paid insurance for entire family.
The projects are run of the mill small commercial (restaurants and strip malls) My friend, who floated my name, says he usually works 40-45 hours a week and a lot of half day Fridays.
I've kicked a hornet's nest within my current company and I'm sure they will come with an offer I can't refuse.
What would the OT do?
Wait for the offer?
Leave no matter what?
There's a lot more angles to this, but that's the gist.

It's pretty blur collar. I gave up being a contractor to work for this GC who, once again, does VERY high end for very influential people. Just go look which rich and influential people are building a new home in Vegas and you'll understand.
I was offered the new job Friday afternoon. I thought about it over the last 2 days and called my boss to get his thoughts. He wasn't happy that I even floated the idea of leaving.

My advice: leave and don’t look back. Just make a clean break and move on. You wanted to leave for a reason. Those reasons will still exist even if they offer you more money.

You always take the guarantee over the promise. Salary and benefits alone are worth it. Because any company that’s going to “promise” you compensation isn’t really serious about it. If they were, it wouldn’t be a “promise.”
