I'm bored and want to get into smoking brisket. What would be a good option to do so?

Mill Scale is the Gucci answer

Super nice but maybe a little more...reasonable? This is just for fun, not for competition hah.

Depends on budget and what you are trying to accomplish. What area are you from?

hill country Texas, probably something closer to 500-1000. Again, this is just for fun.

Well your title does say best, you asked for Ferrari but have a Dodge Neon budget
I’d look at Academy, they carry the Old Country line and are solids options. Oklahoma Joe is another option, nice budget offsets that you can find at Lowe’s. Good smokers to start out on.

Get the Old Pecos from Academy. It's actually welded together. Oklahoma Joe is trash.

Old country is a step above the chargriller and oklahoma joes.
OK joes used to be a great option but have suffered lately due to decreasing quality.
Just keep in mind that a thicker metal will hold heat more consistently than a thin metal.

Yeah, you're right, my apologies

A quality offset will be expensive mainly due to the thickness of the steel driving the raw material price through the roof. I would not personally consider anything less than a quarter inch thick.
Now there are other options for smoking stuff if you have a smaller budget. I would consider a drum smoker. Lot of bbq competitions have been won on them. Completely different than cooking on an offset though.

Look at the Lyfetime smokers. Their smaller one is around $1,100.

I will add that I bought a Lang Smoker and had that baby delivered from Georgia. Its on wheels and a heavy mother, but I am very pleased with how well made it is and how it cooks. You get what you pay for.

My wife ordered me an OK Joes Reverse Flow offset online directly from OK Joes about seven years ago. I love it, and very well made for the price point.
But I think that was before CharGrill bought them or something, because now you see those OK Joes all over Academy, and the doors to the barrel and firebox are much lighter and thinner than the ones on mine.
Currently, my firebox has started to rust more than I care for, thought the barrel is still good and strong. So either I'm going to replace the firebox if I can find the "original" like the one I have, or I have been looking at those Old Pecos brand smokers that you mentioned.
Do you own one? If so, how do you like it?

I will add for those looking for a top notch build on one to check out Boathouse Smokers. He is making some super fine smokers and local for those in South Louisiana.

I love my OK joe, but its about 5 years old, so not sure when quality began to decline.
I had a much cheaper off set to start with and it rusted out after a few years.

Assuming around Dripping Springs? Anywhere in that area you should hop on Marketplace and see what someone is getting rid of. A 24” cook chamber will make a world of difference over a 20”.

My buddy in San Antonio got a big offset deal. I think he got it from Johnson Custom near Dallas. I know it took several dudes to deliver the fricker and they even went under his deck to shore up the supports to hold it. It's a big ole unit. He said you have several configurations to select from and then they build it out for you. His has a big smoke box with a rib tower on one side and then a long barrel for offset smoking.
Johnson Custom
Kinda looks like this, but I don't think it has those poles all over it.

One of the best bangs for your buck is the Old Country Brazos. It's made in TX and can be found at most Academy Sports. At $1,199, you won't find many other 1/4" steel offset smokers at that price. I've had mine 2 years and love it.
I made a couple easy modifications to it, by extending the smokestack and removing the deflector shield on the firebox and it runs like a champ. Very good convection and will keep the heat for a couple hours without needing more wood added.

Had one for two years. I loved it My neighbor now has it and he loves it. Its all welded. Doesn't leak smoke everywhere. Only reason i got rid of it is because i upgraded and started a BBQ business. .

Try Pitts and Spitts in Houston. Very nice quality.
