I Need Y’all To Comment on Chilis Ribs

I had chilis baby back ribs tonight for the first time in about 20 years. They were terrible. I remember working at chilis in the early 2000s and thinking that the ribs were amazing.

Was this:

1. They have always been crappy ribs? Maybe I didn’t understand what good ribs were when I was young.

2. A one of. The ribs are still great, but this was just a bad line cook or a bad example.

3. They used to be great, but like everything else, they have changed for the cheaper.

I haven’t had any since the 90s, but I bet it’s a combo of 1 and 3. They were good enough for us young dumbasses who had never had legit BBQ. Now we have had good ribs, and the ribs they serve have probably been cheapened in every way possible by each new generation of accountants. .

I remember liking them about 20 years ago as well. Probably #1 in your list is most of the explanation, but I’m sure quality has declined as well. I haven’t been to one in a long time.
I used to like their nachos too.

Curious myself. I’m 50 now, but I do remember in my 20’s they were jam up. I find it hard to believe that I was that much more dumb and naive back then. I’m leaning more towards “value engineering”.

not ashamed to admit I worked the grill at Applebees on College Dr for a brief spell in the early 90s, and Ribs were one of my responsibilities. They were pulled from the freezer at end of night shift for use on the next evening service. By then they were sufficiently defrosted but still chilled (who knows the actual internal temp, we weren’t concerned with such things) Id toss them on the grill alongside the various steaks and chicken breasts and then when they looked ready I’d plate them and put them up in the window for the runner to take to the table. That was the entirety of the science behind prepping ribs at Applebees. There were times when this process fell short and we ran out of defrosted ribs and had to microwave frozen ones and then “quick grill” & serve.
Id imagine that the same holds true at Chilis, except for the fact that I actually took pride in my shitty work. Unsure if today’s kitchen staff can say the same.

As a kid I used to love the all you could eat ribs and chicken tenders.

Or actually as I’m typing this, that may have been Applebees?

I haven't been to a Chili's in probably ten years.

Like you, I remember the ribs being pretty good but then they changed the menu around and now it stinks.


They had an awesome chicken fried steak and ever since they changed the menu, it's not on the menu.


The only thing I'd get are the chips and salsa because I remember the salsa being pretty good but I'm not paying almost ten dollars for chips and salsa.

30 years ago, I would have liked “fall of the bone” ribs. And I remember liking the flavor of their ribs. I have not at there in a long time. As someone else said, my guess is that your reaction is partially due to your changing tastes and a decline in quality.

The good news....apparently the people who post here haven't eaten at Chili's for 20-30 years, and their tastes are now much more refined.

The bad news...the company must be on the verge of going out of business. I think the only time I went there was for beer, chips and salsa after work, so I can't venture a guess on the ribs.

Last time I ate Chili’s the ribs were hot garbage, but the Mexican Street Corn was banging. This was like 3 years ago in Batesville, MS.

I don’t think there is a food I eat that is more “luck of the draw” than ribs. I could buy them from the same place back to back days and they could be terrible one day and excellent the next.

I knew a former chilis manager who was so proud to tell me that in the several he managed in his career he was proudest that he added multiple microwaves to every store he managed and only hired Mexicans. He truly thought he was a revolutionary and the best thing to happen to the franchise

They are cheap cuts that they get in bulk to keep price down and they cook the shite out of them until they fall apart. Then sauce them.

For the price and depending where you are, it’s a serviceable meal. There’s no reason for people to complain about the food at these places unless it’s cold or has rat shite in it.

I think this is the reason. I had a similar experience recently. I went recently and the quality of the ribs was terrible. They still had a good flavor but they were mostly “rib tips” or “riblets which is basically that cartilage that attaches the sternum to the ribs. They appear to have started targeting a different demographic.
