Better to stay as close as possible to the beach or more in the city centre Gothic Quarter/Las Ramblas area?

It depends on you mostly, but we stayed at an AirBnB in Eixample and loved it. It was close to a lot of great restaurants and shops.

K&K Picasso Hotel is a nice hotel in an excellent location and is near the places you mentioned.

We stayed at the hotel Claris a few years ago and it was absolutely fantastic. It’s a quick walk to everything

Four Points by Sheraton, Barcelona Diagonal. You're at the top of the promenade that most people take to the beach.
The breakfast made me want to take a nap until lunch. I could sit at a different cafe every day and people watch constantly. There is also a grocery about 200m from the hotel. 90% of the street is shaded, and there is a bus route right out front, and a metro station 1km-ish away.

I had an Airbnb on the Barcoleneta/ Gothic quarter border. Was pretty nice. Walk to beach, walk to Gothic area, close to metro.
Las ramblas.
I liked walking to the beach in the morning. Then again late at night.
Lots of good places to eat in the area too. Including a New Orleans themed coffee shop.

I stayed at the Ritz on points and came here to suggest that was a great weekend. But I can’t deny your post was as efficient as one good hope for when looking for advice.
I generally disagree with your travel habits but it makes consider your advice for my next trip. Well done.

Carrer de Blai (pedestrian street) near there is a mostly locals area with some great tapas bars.

Everyone disagrees with my travel habits, but I also have close to 1,700 nights with one brand alone, so I'm a bit peculiar. You've probably already picked up I'm a heavy shoulder season guy for leisure. My basic principle is that if you insist on going where everyone else goes, when they go, you'll make it to Europe or Asia every couple of years. If you're willing to endure some weather uncertainty, you can go more often. Doesn't seem that complicated to me. My parents were pretty cheap, so we spent a lot of time hitting grocery stores overseas and picnicking, and almost no time in restaurants, and it obviously took.
I was a military brat that was overseas as a kid a lot, so I'm generally more confident in how to get problems taken care of, and how to avoid them overseas. I'm willing to take some risks, when prudent, but do not do questionable stuff like fly American from Texas to JFK, fly LH from JFK to FRA, etc. to save $80. And, the obligatory, OTAs suck, and overseas, they absolutely suck.
I spent 10 years explaining to my ex why we shouldn't use my Farriott points to stay at a hotel in Dallas ($200 a night), and should save them for the Prince De Galles ($1100 a night for a basic room,) and everyone just goes, "but you have points!"
Good job on using points for a balls out experience. It looks awesome. Have you stayed at the W in Barca? It's obviously a standout landmark, but it screams millennial to me, (not just because it's a W that
probably has odd hallway music and fuchsia lighting at night.)
