Frying with animal fat instead of oil

I’ve given up eating all vegetable / processed seed oils because they are catastrophic for your health. However, I love fried food. I want to start experimenting in using animal fat instead of oil.
What is the best fat to use? (Lard, tallow, duck?)
Where can you buy tubs of animal fat? I’ve never seen this at any grocery store but I’ve also never asked for it.
Are certain fats better for frying seafood vs frying chicken?

Tallow and duck are fairly expensive I believe.

If it makes you feel better, avocado oil isn’t a “seed” oil. Could also try coconut oil.
Also,
Pick one

Albertsons (and others) sell lard from 1lb bricks to 1 gallon buckets (and I’ve seen larger). Other stores in BR sell it , but I’ve never seen the really large quantities.

Are grocery store lards any better? They are chemically altered to be shelf-stable, I presume similar to other products containing trans fats.

Source fat from a butcher (i.e. Oak Point, Chris's specialty meat).
I think I paid maybe a dollar a pound and rendered it myself.

I want to say Don's Specialty Meats sells hog lard.
But as previously stated, deep frying anything isn't particularly healthy. No matter what oil you're going to use.

Render your own tallow and lard, it's super easy and taste better. I'd stick to an avocado and olive oil for most pan fried. Ghee is another good option.

Good call. I’m still trying to recover from eating seed oils on vacation

No oil since it wrecks my health. Love fried food. Want animal fat to get healthier as I continue to eat fried oil. As dumb as o am, I still see something wrong here or maybe a troll infestation.

Amazon has some tubs of wagyu tallow. If its from real pure bread wagyu cattle then it is actually different than regular tallow in the sense that its healthy for you. I had jut found out that real wagyu fat is different and is the opposite of regular fat in health regards. Now I don't know if they add anything to it to make it more shelf stable as mentioned above but maybe not.

Wagyu meat is healthy because it contains essential fatty acids, such as omega-3 and omega-6 fatty acids that are beneficial for the body. It has a high unsaturated fatty acid to saturated fat ratio, which has been proven to lower markers of heart disease, such as high cholesterol levels. It also contains stearic acid, which does not raise LDL cholesterol.

Duck fat isn’t very cheap but a jar of it will last you a while
Nvm, didn’t realize we were talking about frying seafood. That’s a lot of duck fat

I'm fond of using lard and tallow.
Lard is very common in Mexican cuisine. Find your local Mexican grocer and chances are they'll sell you freshly rendered lard. It's not expensive and it doesn't have all the BS additives you'll find in the grocery store lards.
I buy tallow on Amazon. The brand I use is $25-30 for 42oz. You can reuse tallow for frying 7-8 times before needing to dispose of it so you can just strain after cooking to extend usage.

Home fries cooked in beef tallow will make you never want to eat a fried potato cooked in anything else.
