Most would consider my wife and I white collar. I have worked plenty of weekends and my wife routinely gets calls in the middle of the night and while rare has had to go in on weekends or even weekend nights.

There are so many different ways to compensate employees that you can't put everyone into one category or another.
You're not including the group of salary-compensated employees who can get their work done in less time than it would take hourly employees to earn an equivalent paycheck. You're also not including salary + productivity bonus compensation (which is in my field).
Some days I can get my daily work done in 3 hours. Usually it takes 4-5 hours, but never 8+ hours unless I'm going for a really good bonus. And I've never been asked to work a certain number of hours. It's all about maintaining a level of productivity. If I've worked hard to achieve a high level of efficiency, that would really suck if I were only paid for 3-5 hours, not taking into account the quantity and quality of work I was able to complete.
Also salary-compensated workers tend to have more generous paid sick and vacation leave (which you may not get at all as an hourly worker). I guess my point is all salaried employees don't get run into the ground and taken advantage of, so maybe take it up with your particular company.

When I started in the oilfield I was hourly and would make bank when working steady but it sucked arse when you were off for a bit not making anything

No doubt.
My last position was salaried where ownership took advantage of the fact that it was a salaried position.
I stayed there 7 months, the last 3 or so was spent looking for something better which I ended up finding.
$30k raise to my salary, plus better benefits, and a position where I have a ton of autonomy over my schedule, etc.
It's great.

White collar, hourly, it's great to punch a clock and get paid a white collar rate... something freeing about clocking out at the end of the day... something great about getting paid extra to work extra... I am resistant to taking a salaried position ever again, the juice isn't worth the squeeze... it would have to be a lot more money and a pretty good schedule with actual work/life balance.

I know plenty in the oilfield with majors on hourly making close to $200k working half the year (in days).

I’m salary. Half the year I work more than 40 hrs a week and the other half I work less. It evens out at the end.
Eta: I’m also available for a lot longer during the day even if I’m “not working”.
