Watch Help/Advice

I know very little about watches. I'd like to replace my old "dress watch" with a new watch that's maybe a little nicer. I favor a minimalist aesthetic. Two in particular I was interested in were:

Any advice appreciated or other things I should be looking at.

Omega will last way longer than a Seiko.

Not at all true and the Seiko is quality product. In fact, the Grand Seiko rival all the top brands for quality and precision.
Co-Axial movement won't be cheap to maintain or repair.

I like the seiko. Grand seiko is top notch IMO

Short on time just back from lunch but either of them are fine watches. GS makes some of the best mid-tier watches so they are nothing to shy away from but the name only means something to watch nerds, you already see negative comments ITT re "Seiko".
I like both watches, neither is my pick but it is an aesthetic thing not a "watch" issue. The first thing you have to decide is whether you are prepared to live with a hand wound watch, if not mark the GS off the list. The 9S64 is a very nice movement that is well-executed and neatly decorated at the price point.
The Omega has the Calibre 8800 in it and it is Master Chronometer Certified, this means it has passed the 8 point METAS test which is a bigger deal than just COSC. It along with the Rolex and Patek in-house testing are the most stringent of any (serial production) watch manufacturer. The movement won't be unusually expensive to service and likely be very similar to the GS. The current Coaxial movements have very specific oiling requirements and so you need a watchmaker that is trained specifically for the 8xxx/9xxx movements.
The GS is going to wear a lot smaller than the Omega the GS is "small". Some people love the diminutive retro look (or have small wrists) and some people loathe it. The GS would be one I would suggest someone try on first, or at least watches near the same size.
You can't really make a bad choice between the two.

Get a grand seiko if you can afford it.
Get a speedy or omega dive watch if that's your thing. I wouldn't go dress watch for an omega.

I think either of those watches would be solid, the top one is a manual wind, so that is something to take into consideration.
I'm not a big dress watch guy, but if I had a reason to have a dress watch I'd probably get a Cartier Tank or a JLC Reverso

You're missing the most important aspect of this watch. What is your price point

frick it, get a SCG sub or omega seamaster and save the thousands of dollars.
Only watchnerds are going to know the difference and you can mod it/bang the frick out of it knowing that you only dropped 500-700 on it. Plus most of the clone movements are at a 99 percentile these days, outside of a few outliners (omega speedmasters, most major chronos actually).
I'd lean heavily towards a SCG seamaster.

Check out some Tudors if they're in your price range.

I wear a watch because of how it makes me feel, not for other people. I couldn't imagine walking around with a "fake" watch
