Favorite cold weather comfort foods?

We've got some winter weather headed our way early next week and I'm brainstorming what to cook.

Not gumbo or chili.

I would love to hear some of y'all's favorites or suggestions.

Kind of thinking about doing a pozole but looking for inspiration for other dishes as well.

Beef Bourguignon

Braised Short Ribs or Braised Pork Shoulder - Either over savory mashed sweet potatoes

Smothered Chicken

Chicken Stew - Basically made just like gumbo but with all the sacrilegious stuff thrown in. Canned whole tomatoes, misc. veggies, etc.

White Beans and cornbread

French Onion Soup - Especially if you get your hands on some beef bones and make your own gelatinous stock

Vegetable beef soup and cornbread.

Chicken and cornbread casserole, which is chicken in a cream sauce baked with cornbread batter on top. I think the recipe maybe in the TD cookbook.

French onion soup. I made some last week and ate it 3 nights in a row.

Big hot bowl of mustard greens with cornbread.

Anyone here ever had a Vietnamese hot pot? This is on my list to do with my my new Vietnamese lovely lady. It looks like a delicious chunky soup according to google.

I love it, but I just made a lamb chili like 2 weeks ago so I want to do something else.

You can put a lot of things in it but it’s not chunky. The broth is generally light. Not sure if it’s a soup or not because you use chopsticks to eat and sip the liquid from the bowl. A very social meal when eaten outside when it’s 50 degrees.

Homemade potato soup made with golden potatoes

or

Cauliflower/Celery soup
Fresh cauliflower grown in my garden, boiled down in chicken stock, with a can of Progresso cream of celery soup...damn tasty on a cold day.
