In most places service industry is something you do until about 25 or 30 and then you age out.

If you’ve never been in food service go watch The Bear on Hulu. Especially the long shot episode at the end of the season when shite hits the fan in the kitchen.

It pretty perfectly encapsulates the stress of working in food service and that shite makes you want to drink just watching the episode.

Well we aren’t talking about just servers. But if you think about them, many work shifts that may be 11:00AM until 11:00PM.
Factor in line cools, chefs, bus boys, dishwashers.
It’s really been a common known thing for long time that they work long hours if they want to make a decent living. Not sure why that’s some kind of disputed topic.

Exactly. I would tend to agree that IN MOST PLACES your Texas Roadhouse will be heavily skewed towards your age range though.

I didn't see any hard drugs in the restaurant but I used to slam those big Foster's beers and suck back some jernts on the back dock/dumpster area with the kitchen staff and a manager or two at the Metairie outback back in the day.

if they work 2 shifts in a day, sure. But they also aren’t doing that 5 days a week every week either. I work from 8 to around 6 M-F, do a little work from home every night and work a couple hours in Sundays. I wouldn’t say I work “long hours” but that’s still 55-60 a week.

My sister has worked in the food service industry for like 15 years. I think this long hours thing is being exaggerated. They work late, not necessarily long, hours. Most of them are not working more than 40 hours a week on the clock

I hate those shows. People like Gordon Ramsey and his constant berating of the staff drives me nuts. Having been in the service industry for quite some time, I can tell you that if you talk to your kitchen the way those idiots do on those shows, you won’t have a kitchen. That’s especially true if you have a lot of Latinos working the line. They stick together and won’t put up with it.

I did 6 years at a white tablecloth French Quarter restaurant in HS and college. I had a ton of fun and made good money, but knew I wasn’t in it for the long haul.

My brother was not so lucky. Took him a decade to figure it out.

I think I read here on tOT that is you were traveling and wanted to source some drugs, you don't ask the cabbie or Uber driver. You go straight to the busboy near the dumpster. If he doesn't have any, he knows where to get it.

I have been working in restaurants/bars for a very long time without a drug habit, nor do I drink on the clock.

People like me aren't unicorns neither.

I know a couple of the younger line cooks hit their pens in the walk-in and the dishwashers are usually stoned out of their minds, but this thread makes your average kitchen sound like backstage at a Motley Crue concert, and that's not my experience. Plenty of adults who take their jobs seriously. I never drink on the job, and believe it or not, it's frowned on in any kitchen worth a shite.

I will say things were a lot wilder back in the 90's when I first worked kitchens.
