Slow cooking a roast while letting it make a roux from drippings and flour, and serving that over a heaping of rice isn’t done other places. Sorry.

Here’s a link describing upstate South Carolina as “the rice and gravy belt”.
You really can’t seriously think that rice and gravy is solely a Louisiana thing. That’s really weird.

If the rice and gravy has some type of protein in it, then and only then could it be considered a main dish, if not, rice and gravy is a side dish. Simple white rice with gravy isn’t and never will be an entree.
