Growing up it was always corn, especially with a pork gravy.
Nowadays when I'm cooking it, it can be pretty much any vegetable. This week we had a pork rice and gravy with grilled zucchini and squash. Sometimes we do asparagus, broccoli, cauliflower, etc... Although I like canned vegetables, because that's what I grew up on, we try to stick to fresh.

Thanks everyone, and yea I'm 100% a backward arse coonass that sometimes serves rice & gravy as an actual entree.

What do you call the meat then, and how is in not the entree?
My biggest issue with this phenomenon of calling the side dish the entree is that you never really know what the actual protein. That's the most important part of the whole meal. Are we having pork steaks, roast, deer meat or nutria rat? The diner can't tell because all the menu says is "rice and gravy".

making a roast right now to eat a rice and gravy tonight.
Corn will be the side. I basically put it all in a gumbo bowl; the roast, rice and gravy, and the corn, with a nice role on to sop up everything at the end and literally clean the plate.

I guess so. I love how a parochial view of the world can warp people's understanding of things.
The rest of the world just eats white rice. It took Louisianans to think of putting meat droppings on top of the rice.
