How do they have all these ships and they always get destroyed? What’s the turn around time of building these ships? These body shop business must hate living in this galaxy.

There’s a lot of planets, a lot of resources. Corellia, which you see in “Solo”, was basically a giant planet-sized ship yard.

In the Star WArs universe owning a ship is like owning a car as is doing maintence on it. That is why someone like Han Solo don't need a PHD in astrophysic with a shite ton of degrees to learn how his spaceship works.
Pretty much you have your scientist but tech is so streamline that even a kid like anikian can put something together without much trouble.

It’s a galaxy wide empire, they have thousands and thousands of ships. Most ship stuff is automated and run by droids.

Also, this universe has existed for more than a 1000 years. When I played KOTOR, it took place 1000 years before the latest Star Wars that we saw in the movies and back then light speed travel was very common. You can build a lot of ships and develop an infrastructure over a millennia

If you are willing to throw a lot of resources at it you can build a lot of stuff. The US had 36 aircraft carriers in World War II, along with building hundreds of Liberty ships, destroyers, cruisers, a few battleships, and Coast Guard cutters. While also building a massive Air Force and a huge mechanized Army.
