I like these threads because you can usually come across a dip or app you never heard of and can add to your repertoire.
Today I'm doing:
Meatball sliders w/ marinara, garlic butter baste a grated fresh mozerella
Smoked/grilled wings (buffalo and raspberry chipotle)
Fried baby back ribs
Boudin/pepperjack eggrolls
Mini Crawfish meat pies
Rice dressing
Deviled eggs

Surely you’re going to throw in a few mini corn dogs too.

Making tamales as that’s our Super Bowl tradition. I have a recipe from my wife’s cousin, straight from Honduras and it’s the real deal.
Here’s to eating way too many tamales and hopefully a Burrow win!

Never made tamales but do enjoy eating them. How labor intensive is it and what protein are you using?

It’s a process to say the least!
The recipe calls for 1lb of ground pork and 1 lb of ground beef. You can use 2lbs of either if you want. Mix it together with the other ingredients (cumin, salt, pepper, other spices that I can’t remember without looking at it) and let it sit overnight in the fridge. Next day take tamale papers, corn meal, and scoop some meet into a pile of cornmeal. Roll it a little bit until it looks like a small sausage then put it in the paper and roll the paper.
After that you stick it in a toaster or large pot and stack them on top of each other in alternating directions. Once finished, you add water and chili (I make my own chili for it) to the pot until it covers the tamales. Stick it in the oven at 350 for about an hour and a half to two hours. Fair warning: a tiny bit of cornmeal goes a LONG way.
Then you eat like there’s no tomorrow.

Something simple today. Already ate some boudin I made yesterday for my breakfast meal.
Later today I'll toss some wings on the grill and them bring them in to coat with a couple different flavored coatings, one will utilize my homemade habanero sauce and the other will probably be infused with my homemade pepper jelly for something sweet.
I'll also make a nice bowl of my Cajun potato salad to go with it-------well, that and cold beer while watching the game and pulling for Joe B to take his first Super Bowl.
