I feel like they could/should implement an electric ordering kiosk similar to what bucees have. Although this would require your clientele to be able to use such a thing which may be asking too much.

While I enjoy Billy’s very, very much, I don’t bother with the Scott location due to the exact frustrations in your post (well, except for your frustration over demographics, I’m not that petty of a snowflake). I go to the Opelousas and newish Carencro locations.

The boudin from Kartchner’s and Nunu’s is very much on par (in my opinion), or at least so negligible in comparison that’s it’s not worth the extra commotion going to Billy’s.

Also, had the fried ribs from Kartchner’s for the first time this past Sunday…holy geez. Thats worth the reason to go North on LA 93 instead of South at that exit.

best stop is better than billys anyways. havent had dons in a couple years but the boudin was on point last couple times...everything else not so much.

Same here, I live at that exit and bypass the line at Billys every single time for Best Stop or Kartchners. Billys may be better but there's no way it's better enough to make it worth the wait or parking lot headache. One day if I pass by early enough and the line isn't terrible I'll stop in and grab some to see if I'm really losing out.

How is saying one thing bothers me more than something else backtracking? Still acknowledging both bother me but to different extents.

Also I said “demographic” and referred to people on government assistance and who use their cell phones in what most consider in opportune times. This applies to a variety of people.

I also decided to load up on the Billy's while back home for Christmas. Drove this time but I usually fly in so don't get the option to load up an ice chest often to bring back. I went to Opelousas location and it wasn't bad at all. Got a total of about 15 pounds of regular, smoked and crawfish. Also a couple other things as well. I am stocked for now.

Haven't had Nunu's but agree otherwise with this.

Billy's smoked boudin is GOAT1. Kartchners is 1A.

Can inhale either equally.

It'd like that at all the locations. Opelousas, Lafayette, Krotz Springs. Expect to spend at least 15 minutes (or sometimes alot more) in line on average says.

I know I'm in the minority but I prefer Kartchner's over Billy's for most items. When it comes to regular boudin, I prefer Bourque's over either.

The sausage at Kartchner's is top-tier, especially the andouille. As for the boudin, sometimes just depends which one I've gone longer without having.

Had their boudin for the first time while in Lafayette for Christmas. I agree, the inside was great. The casing, however, much more chewy than places like Billy's, Kartchners and Earl's. I like a casing that bites off easy. Also picked up some of that jalapeno cheese bread I've read about on here. THAT was certainly worth the price of admission.

And you mention regular boudin; that's how I judge all places' boudin. Smoking can even make subpar boudin taste good (Peto's in Roanoke is Exhibit A for that). How boudin tastes without needing that extra smoke flavor is how I determine my personal favorite places. I can always just buy the regular cold and throw it in my smoker at home.

Line is always too long at Billy’s. I rarely go there as there are lots of of other very good options.

Process improvements cost money. Better employees cost money - if they can even be found. Owner doesn't want to take a hit to profit, which they think will happen, and doesn't believe more efficient will result in higher sales.

It's the same mentality that results in store owners passing along credit card fees to the customer, despite a million studies that indicate accepting credit cards result in higher sales.

I used to have a lot of clients in F&B, most of them have been fired because they are great cooks and terrible business owners when it comes to finding ways to make more money. They make "enough" and are happy with it.

I know its fun to try and knock billys for some people but you have to give it up To him. Dude took a shitty store in krotz springs to what he has now. An insanely successful business that has a full parking lot at every location pretty much around the clock.

Not only that, but i think his product has been very consistent. Very few places grow like he has and not take a hit on quality and consistency but his product hasnt.

Im def envious of what he has accomplished. I have customers from out of state that ask me to send them billys boudin. 20 years ago that was pretty much unheard of. Dude took the boudin industry to a higher level.

I agree in regards to Best Stop’s boudin. Can’t quite put my finger on it, but I personally rank if 5th on that exit.

Excellent cracklins and enjoy their boudin balls.
