John le Carre: Smiley trilogy (The Spy Who Came In From the Cold, Tinker Tailor Soldier Spy, and Smiley's People). This is the best.
Len Deighton: (Berlin Game, Mexico Set, and London Match). If you like le Carre, you will like this trilogy too.
Tom Clancy: The Hunt for Red October.
Frederick Forsyth: The Day of the Jackal. Does this one count? Not quite a spy novel.
Ken Follet: Eye of the Needle.
Demille Nelson: The Charm School. Very underrated.

I was a huge fan of Robert Ludlum back in the day. He wrote Cold War espionage thrillers. I haven't read his books in years so I don't know if they may seem dated. It may be time for a reread.

The Grey Man series by Mark Greaney was fun and there are around 15 of them. I thought they were more realistic and grittier than the Reacher books.
Also they Sigma Force series by James Rollins were entertaining as well.

The Parsifal Mosaic is my favorite must read Ludlum novel. It pretty much blew my mind back in the 80s.
