When the festival started, hen was the predominant meat used to cook jambalaya so that is what the festival chose. The hen used today is not the same as 25/35 years ago and it is difficult to get the hen to be tender enough to eat.

There has been a lot of discussion about this subject and what can be done to make it better. For the foreseeable future, hen will be cooked at the festival because that is tradition.

There will be pork and sausage available for purchase and the Champ of Champs competition cooks pork and sausage.

Add a wooden post at the corner with the gas line running through it.

Base cabinet in front of elec panel is a code violation. If that matters to you.
