I went on a cruise last year for the first time since 2003.
Personally, I will say that it confirmed my opinion that cruises should really only be done for trips that can't be done other ways. Examples would include Alaska, (the trip I did) cruising through Norwegian fjords, the Galapagos, and Antarctica.

Yet, every time I go to MX/Central American beach location with one of my friends from Brusly, he spends approximately 86.4% of his time floating on his back in the ocean with a beer with no real sense of the world while he listens to awful Jimmy Buffett music.
No safety briefings, tiny cabins, etc., to be seen. But whatever you think relaxing is, is what is important for you.

Alaska seems like it would be nice. I’ve done a few cruises. I enjoyed them. It’s not something I would do all the time.

Where did OP say he couldn't afford it? If anything he said he it was expensive, which they are. If he said he couldn't afford it then I'd agree with you.
Chances are that the OP's wife enjoys it and its her parents, its their kids grandparents.
If OP doesn't want to go, I wouldn't have an issue with that.
Or, maybe the OP should suggest the grandparents take the grandchildren on their own and OP and the wife stay home.
This is akin to going to family for the Holidays. I understand it not being what everyone wants to do and sometimes its nice to stay home and be quiet.

I enjoy cruises but if the kids prefer going to the resort then just say that. Let them know the kids are old enough to voice their opinions. You don’t want to sound unthankful but you don’t want to send the entire family on a vacation no one really wants to go on. Since the kids can’t go alone with the grandparents then you get a say, IMO, whether they are paying or not. With their DVC membership this shouldn’t be an issue. If they get all pissy then it gets complicated but I can’t stand people who want to force everyone to do what they like.

So me and the fam are doing a Disney Cruise this summer. We took my daughter to Disney World in 2018 and it was like 5Kish (this included a meal plan)....I priced the same trip today and it was just as much as the cruise which was in the 10K range without the meal plan at the resort (most meals are included on the cruise).
I may not ever go back to the resort at the prices they are today....especially not when the parks are "selling out" even at some traditionally non-peak times.
Granted I may never go on another Disney Cruise after this one, but they wanted to do one so we'll do one.
Hell if it were me I'd be just as happy going to a resort in the Hill Country (TX) or Wine Country (CA)...probably for a helluva lot cheaper either way.
I may not ever go back to the resort at the prices they are today....especially not when the parks are "selling out" even at some traditionally non-peak times.

I mean, it's personal preference. Cruise line makes a difference.

Cruises are good if you are old or on a budget. Old people like the fact that they can just sit on a ship and do nothing while someone else prepares all of the food, entertainment and arrangements. Poor people like the fact that they can go to five Caribbean Islands for $499 pp including all you can eat, etc. Price out flights, resort costs and fees, restaurant bills, rental cars and other activities for Aruba, Bermuda, Bahamas, Cayman Is, Virgin Is, St. Lucia, Antigua, Grenada, Barbados, etc. and you will see why people (from a country where the majority of families bring in less than $1k a week) chose to travel, sleep and eat on the giant boat parked in the harbor.
I'm not much of a cruiser but I can see the appeal of multiple stops and minimal hassle on a discounted budget. That excludes Disney which strike me as a giant ripoff. 10 grand to go on a boat ride with Goofy and Snow White? Not happening. I'm pretty sure I could plan any dream vacation in the world for that kind of money.

Going to different places each day while only having to unpack once. Having a variety of things to do on board and on land.
But Disney... Disney is stupid, crazy expensive, and to me provides one benefit.
Character lines.
Go to the parks... and you spend 2 hours in line to take a picture a character.
But on the ship... the characters are everywhere and often there is no lines... or the lines are short.
We went on a Disney cruise years ago. My youngest was 4... and Tiana walked up to her, took her hand, and proceded to walk all around the ship with her for 25 mintes, talking and playing with her.
My kid was over the moon. That's a great experience for all of us. But it's kind of only awesome for a limited time in life.

FLoating down the Guadalupe River while staying at a Airbnb sounds like an awesome trip. Throw in a bowl of chili from Phoenix Saloon and a weekday stop at Schlitterbahn and you have a fantastic trip
