I’m wanting to take my kids to Disney for one day. Which park

Magic Kingdom. Look at a map park, figure out what you want to see first and get there early. After entering turn Left and head to frontierland and make sure you do all the good stuff early.

This. Also I wouldn't do magic kingdom on the weekend as that's it's busiest time generally, most people that do a weekend Disney trip hit up MK. If you aren't staying on site, I'd also recommend not going to the park with Magic hours as that will be busy that day.

The crowds are projected to be pretty light until the 26th or 27th actually. Schools in the vast majority of districts are still in session.

No question you go to Magic Kingdom. Go to the stand next to the Aladdin ride and get a Dole whipped float

One day, I would have to say Magic Kingdom and the iconic castle picture along with all the characters you could see.

At that age they are not going to remember too much anyway.

It will be the most crowded for sure.

Epcot is a really good way to meet characters as well and I never find it as crowded but your kids would be too small for most of the good rides.

Of course Toy Story land is about to open at whatever the name that park is with Tower of Terror. I'm sure it will be really packed.

I would skip Animal Kingdom with that age group.

Best rides are at Hollywood Studios, but not for young kids and there's only a handful of attractions. For kids that age, it's easily Magic Kingdom. Much easier to spend a full day there and many more kid friendly attractions.

If you are going to do this, buy your tickets now and get fast passes.

For a 6 year old, 7 Dwarves Mine Train will be his/her best thrill.

Get fast passes for three of the following:

7 Dwarves
Peter Pan
Ariel under the sea
Winnie Poh

I wouldn't waste fast passes on the following because even if the line is long, it goes fast:
Dumbo
Small World
Buzz Lightyear

If your 6 yo wants to meet a character, use just one of his/her fast passes, you don't all need fast passes.

One thing about having a 6 month old, you can do rider swap. You get three fast passes and your wife get three different fast passes.

For example, you get a FP for space mountain, your wife stays with the kids, you come off the ride, she goes on through the fast pass line w/o a fast pass. They will give her a rider swap pass when you first enter.

Someone correct me if I'm wrong, but I believe you can do it.

That way, your 6 year old gets three FP, lets say 7 Dwarves, Ariel, & Peter Pan. You use 2 of your FP for 7 Dwarves & Ariel, your wife uses one of hers on Peter Pan.
That leaves 3 FPs between the two of you.
Uses one for a Character Meet if you want.

You still have 2 left. Then you do like I said above, use a FP and get a rider swap for two adult rides.

When I was there in February that's not how rider swaps worked? They gave you 2 FP total and they were only for the same ride within a certain amount of time, although we just had a 4 and 2 year old but the 4 year old is all who really rode those so maybe if you have other kids they give you more?

Pretty sure they are cutting down on rider swaps as many people abuse them. They made it to where my wife and daughter rode then at the top they gave you 2 FPs so I could then go with my daughter.

If you have never been to WDW then Magic Kindgom is likely the best answer, but the baby won't care and the 6 year old may easily enjoy one of the other parks more.

Meh. Probably not. Disney movies and characters are special in this age demographic.
At 8-12 years old... they are probably more interested in the bigger and better rides (especially if they have been before).
But MK is what most of us older folks envision what Disney really is.

100% Magic Kingdom. Go in and go straight to Fantasy Land. The kids area is right back there as well. You can hit up the other areas (Space Mountain, Splash Mountain, Thunder Mountain, etc) when the kids are older and big enough to ride those rides. There is a flying carpets ride over in Adventure Land they will probably like, very similar to the Dumbo ride. So might be worth going over there at some point when you get tired of Fantasy Land. Take the train to get over there, which kids love.
