I've been to Amsterdam roughly 10 times. Old Sailor bar (Cafe Old Sailor), Monkey Bar (In't Aepjen) and book a spot at the Anne Frank House about 2 weeks to a month in advance. Its constantly booked and hard to get a spot. If I think of some more I will add. Cruise the Red Light...they're in the windows. Amsterdam is a cool city. If you like art the Van Gogh house and Rembrandt house are both nice. They also have some pretty cool off the wall museums.

Heineken Experience was pretty cool. You can find hookers 18-80 blind crippled and crazy in the windows.

I was there in 1999. The weed is obviously fantastic, largely because of the highly competitive market. The red light district especially is like a Willy Wonka fantasy land of weed. You have to go to the Bulldog, just so you can say you've been there.
Have one of those waffle caramel things. They're fantastic. I eat the cheap ones from Walgreens just because they remind me of them.
Of all the museums, Van Gogh has the best t-shirts.
